Those vines you saw are actually Jonathan's stand, issa really cool little detail u wouldn't normally get at first so this man Dio got 2 stands cause of the two bodies

The vines are explained as being the "Hamon Stand" they are a manifestation of Hamon's spiritual side. The vines are able to conduct Hamon and also create/project visions just like Ton Petty did back in Part 1. It's all connected. Jonathan was a Hamon User so that's why DIO is able to use that stands.
