I love these cookies! I add almond extract instead of vanilla. I take them out of the oven and lightly roll them in powdered sugar, then when completely cooled I roll them again. The almond extract gives them a really good flavor

Mrs Pena cookies is what I affectionately call them ♡. She was my moms neighbor as I was growing up. She made the most delicious polvorones and coconut cake that I namedl Mrs Pena cake 😊 . She's since passed, and it's been forever since we've had either of these 2 desserts from her, but I swear I can still taste them!

You can make these with much less sugar, they are delicious as well. Ive made them with easily half the sugar or even a third cup. They get coated twice in powdered sugar, once when warm again when cool, plenty sweet

Yes, you can. It's best to take the dough out of fridge and leave on counter for 15/20 mins., then you can roll dough into balls, bake them over her instructions, cool for 10 mins after taking out of oven a d then roll in powdered sugar.
