To all the people talking about they need gloves. Gloves melt around fryers, so it is hard to use them. Also, by the Food and Beverage Administration, you are supposed to change gloves after 15 minutes of use and wash your hands for 16 seconds in between changes, pretty hard to when your slammed! And last, VERY many places you eat at, do not use gloves, and many of them are big time chef's, Ramsey, Puck, and all those big timers that own big time restaurants! They are however, are supposed to wash their hands often and in between touching foods.

Cajun Plaisance well I also work at Popeyes. Even before the pandemic, gloves were and are mandatory, every piece of chicken we dropped we had gloves on. Again, even before the pandemic, we were required to wash our hands every 15 to 20 minutes, slammed or not. And if it does get busy. We stock. On a normal day we always drop small amount of pieces of chicken. 6-8 piece consistently, but when the rush comes we stock. 10 piece. That buys time to wash hands properly. No hate but it can be done. My co workers are very well trained to do all of it.

He gave us a secret with the shortening, they fry the chicken in shortening, lard or beef tallow. The batter gives it sum of it flavor but it’s mostly the oil. That’s what gives u the signature taste

People have allergies so I doubt it is peanut. Old southern cooks (black) always used Crisco for frying and baking. Chicken is crispy and pie crusts are flaky. Crisco was made with lard (animal fat). Later it was introduced as a vegetable shortening for more healthy cooking.

No. I work at popeyes and the seasoning is what gives it its flavor. Basically, what we do is we clean the raw chicken, throw it in a machine, and pour the seasoning in the machine. And it's either mild or spicy seasoning. Then put it in a big pan and put in the cooler. You're not too far off though, the oil makes the chicken tender and juicy.

When I worked at Popeyes in 88-95 We made biscuits from scratch Butter biscuit shortening and biscuit base. We had to let the pre mix set for 24hrs before we used it. But back than they was owned by Al Copeland, He also owned Church's Chicken.

I wish the Popeyes here in Victoria Texas did the same thing like these awesome people. Here, the chicken is super duper tiny overcooked and dried up especially the biscuits! Employees are rude some of them are. I have never seen such tiny chicken before the wings and legs. The taste is not the same anymore and the quality.

Also at 2:29. In majority of the USA, a case of chicken breast or thighs(for industrial use) is 40lbs x 100(weekly)= 4,000lbs a week, which I feel for Popeyes might be an understatement but then again on a 4 week period, that ~16,000 pounds of chicken a month. Which by averages could be around ~3,000-5,000 chickens they cook and sell every month.

The Louisiana Popeyes chicken on Edison in pipeline this Has happened to me three times that I have ordered and paid and come home and find missing orders today again I ordered eight pieces of chicken tenders up on shrimp and two biscuits and once again come home check no biscuits this is the third time and when you call them they make you hold for 10 minutes and then in message says I’ll call again it’s really shit that they shortchanged you when you go there and you’re a customer first of all they tell you to wait but we will bring the food to you and after 10 minutes they bring the food and the order is not complete

I remember I worked at Popeyes for 2 years back in 2004. I was the main cook who worked the back ( frying, peeping the batter and chicken for myself for my shift. And I always hated when I seen other cooks at that store nattering chicken in batter that’s 70% water, just to save on product.. the chicken always came out looking and tasting like ISH!
