As a non-native Texan who has lived in the state for 15+ years, I was initially triggered by Jowol's statement about fat in brisket. But then I thought about it a moment... I don't know exactly if he meant that there was chunks of fat in the brisket, or what. Brisket shouldn't have that if cooked correctly, because the fat should melt into the brisket meat and help flavor it alongside the smoke. Brisket itself is a tough cut of meat, so the fat is vital during the smoking process. It softens the meat and flavors it. Otherwise, you'd have a super rubbery piece of meat. Also, any meat cooked and flavored correctly should not need any sort of sauce. I absolutely hate Texas barbeque sauce. It's normally vinegar-based, and I hate vinegar. But if the meat was smoked good, it should taste great plain. (This goes for chicken too, if smoked).
