We can't get pork belly that lean here in the states. I'd much prefer leaner pork belly than we can get.

Not too long, hopefully. Our new house is almost complete, then I have to get the BBQ Shed built, so hopefully in the next 3-4 months. I'm going to try and build a little set/studio, fingers crossed

I reckon the skin would be super chewy. If you look through my videos, check out the crispy pork belly video. If you want to eat the skin, this video is perfect. Crispy Pork Crackle is delicious.

I understand why you took the skin off but my question is couldn't you have scored the skin then cut into cubes

Even with it scored it would still end up chewy. The easiest thing to do would be to take the skin off and grill it separately, til it turns to crackle

Hectors Smoke House well that makes sense to me and by the way they have looked absolutely fantastic
