Absolutely beautiful! I do something somewhat similar...I slice the Pork Belly, thickly, season and hot smoke. Remove and put into a pan with Duck Fat. Leave to cool. Then when ready to serve, a quick confit....It's crispy yet soft, rich, unctuous and very delicious.

If you ever think about using lard or anything else but duck fat for duck leg confit A real chef will find you and dispatch you with his favorite chefs knife

Kamado Joe warranty is useless. Customer service is even worse. Try to get something replaced. Will never happen. Their reps are trained to do everything they can to deny claims.
