I just made this!!! I’m so excited for my family to try it for dinner tonight. It’s smells amazing and the meat has the best flavor EVER. Followed the simple instructions but used Coke Zero because we are keto. It still caramelized the meat beautifully. YUM!

So mine are about done but I cut my pork into smaller pieces. It's been one hour of simmering and they seem to be done. They are dark golden and the piece I took out tasted delicious.

This is a bit different than your Tik-Tok version. In Tik-Tok, you did definitely smaller chunks and what did you do with the fat ie, lard you cut off You also added the water later then you did in Tik-Tok. I really would like to know which recipe to follow

If you buy pork butt most the fat is on the back. So just use a sharp knife and slice it right off. You don't gotta dig around cutting fat off from everything, really just the back. It's one line of fat. And like always, never slice towards your hand.

Preparing it with this method, yes that amt of fat is necessary. Because the fat is what's cooking the pork, you need it to be fully submerged in the fat. This is the most traditional way to prepare this dish. There are however other methods of cooking it (like baking or using a slow cooker) that require no additional fat to be used. If using any of these other methods the way you achieve the crispy exterior after cooking it all the way through is to spread the pork chunks on a baking sheet and putting them under an oven broiler for a few minutes.

Be sure to look out for the whole cloves, bay leaves and pepper corns, not fun to bite down into when eating. Made this and the flavor is fine but not authentic.
