Grabs coat, gets in car and drives to Sam's club to buy an entire pork loin and cut my own! Gonna make this one for sure! I was skeptical about it falling apart and looking ugly like the chicken. So I think I will cut larger pieces and can them this way. You are just full of great recipes and information! One of my favorite channels!

Whole pork loins were “buy one get one free,” so I have two in my fridge. Deciding how I want to can them. I can do multiple recipes in a single canner load, right? There are 11 pounds of meat. Pork chile verde, these pork chops, and maybe some with rosemary, balsamic vinegar, and white wine?

I usually cube and make strips with my pork. I am loving this recipe...something different so as not to have the same old, same old. Next you should try brisket. In Feb. my Kroger affiliate had brisket on sale for $1.99 a lb. I bought a 16 lb. brisket, partially cooked it, trimmed the fat, made a broth from the juices. I cut the meat in slabs and put 2 in a pint jar. I pressured canned 14 pints of brisket that is tastes even better than the roasts I usually can. Thanks for all that you do for all of us!!!

Very interesting!👍 What a great flavor combination! However, I will try to save the space in my jars and cube the chops. I think it will be just as lovely over rice. The jars are getting insanely expensive. The regular-priced ones are disappearing. So I am trying to pack them as efficiently as I possibly can. Thank you for the recipe!🥰

I made this last night. It is moist, and held it's shape and texture. I do agree with you that it could use a bit more cayenne, and a pinch more of salt. But overall, it was a hit and I will be making this a staple in our pantry. My husband doesn't like a lot of spice, so he thought it was perfect. So easy to put over rice on a busy day. Thank you!

The old Kerr canning book has a recipe for canned pork chops, I know that it calls for browning them first but I don’t remember anything else.

I love the idea of the whole pork chop in the jar thing, I was wondering about bbq sauce instead. Don’t eat pineapple but the bbq sounds delicious. I would season the chop with a rub and dilute the sauce a bit, add a little smoke maybe. I love the steak and onion gravy one, we’ve opened several jars of that. Love these meals in the jars. Thanks

I have never canned whole pork chops, but just added them to my grocery list (if I can find some on sale)!. I wonder if you could substitute apple 🍎 juice for the pineapple 🍍. Maybe some diced apples 🤔 Thanks for sharing this wonderful recipe!

That sounds good ... apples love pork ... less acidic than pineapple... maybe if you added a TB of vinegar it would work to tenderize..... but canning tenderizes anyway

Pretty much sounds like a sweet teriyaki sauce that could be spicy with more cayenne. The sweet cuts the heat so maybe you adding the pineapple took out your little bit of cayenne heat. I wrote it down to add more bc we like HEAT, lol. Many Blessings from Deborah in West Virginia!

I have this in my canner right now as it sounded so good to me. But I didn’t have nearly enough liquid following this exact recipe. So I heated up some pineapple juice and just guessing how much I’d need. I still wound up topping off with hot water. I sure hope this is good. The convenience of having this on my shelf would be great

I loved the steak and onion. I can only do 4 pints at a time so when I find meat on sale I buy enough for a meal and 4 pints. As soon as I can I open one to eat to see if I will put on my Do Again list. Thanks for sharing this one, I will definitely try it in the future.
