1 pork loin
1 onion,
1 small carrot,
1 clove of garlic,
1 i 1/3 cups of water or stock,
1 bay leaf,
1/2 cup of heavy cream plus 2 tsp of potato starch (or corn starch),
few tbsp of chopped dill,
seasonings to taste: salt, pepper, granulated garlic, sweet paprika
Remove any tough membranes from the meat and cut into thick slices. Sprinkle with seasonings. Cook your pork loin on a heated skillet with a bit of oil, until lightly golden on both sides - the meat should be still raw inside. Set aside. To the same skillet, add finely chopped onion and grated carrot, cook for few minutes and add finely chopped garlic. Add the meat back in and cover with liquid (add enough water to lightly cover the ingredients in the pan). Add bay leaf. Simmer on low for aboout 5 to 8 minutes or until tender (do not overcook the meat!). Mix the starch with cream, creating a slurry. Add to the sauce and simmer, until thickens. Sprinkle with dill. Serve over mashed potatoes, rice, noodles or barley and some crunchy slaw on the side. Enjoy:)
