PORK LOIN STUFFED WITH GARLIC AND BACON
5 - 6lb pork loin
Salt and black pepper to your taste
GARLIC AND BACON PASTE
2 to 4 tbsp olive oil
1 tsp thyme
8 to 10 cloves of garlic
2 slices of bacon
Fresh Parsley to your taste
FILLING
Bacon Slices - NOT THICK (the slices must be very thin, if you don't have thin slices of bacon, it is important that you fry them and cut them into small pieces to be able to stuff your pork loin... otherwise the bacon it will be raw and could make you sick)
POTATOES
3 to 4 medium potatoes
2 tbsp olive oil
Salt and pepper to your taste
Thyme
Fresh parsley
Parmesan cheese for sprinkling
Cup - 240ml
Tbsp - 15ml
Tsp - 5ml
*Preheat the oven at 350F
**It's important that your Pork Loin meat is at room temperature
***For a beautiful color, use a hot pan in high heat before taking the Pork Loin to the oven
****There are people who like crispy bacon, if this is your case, put the bacon in already in fried pieces
*****Bake Pork Loin 25min per pound at 350F, or until the internal temperature should be at least 145 degrees F
******Don't forget to drain the liquid that the pork releases in the pan. If you have, a rack pan is recommended for better cooking
*******Let your meat rest for 5 minutes before cutting into slices and serving on the table
