600 g of pork neck fillets,
2 onions,
1-2 cloves of garlic,
approx. 2-3 cups of water,
2-3 bay leaves,
few kernels of allspice,
1-2 tsp of corn starch or flour plus approx. 1/2 cup of heavy cream
salt, pepper, sweet paprika, marjoram, granulated garlic and optionallu some flour for dusting the meat before frying
Sprinkle the meat with seasonings. Optionally dust with flour on both sides. Heat a small amount of oil in a pan, add the meat (you can do this in batches) and cook for few minute, until golden on both sides. To the same skillet, add finely chopped onion, followed by finely chopped garlic. Add the meat back in and cover with liquid (add enough water to cover the ingredients in the pan). Add allspice and bay leaves. Simmer on low for about 60 minutes or longer (until really tender). Mix the starch with cream, creating a slurry. Add to the sauce and simmer, until thickens. Sprinkle with parsley. Serve over mashed potatoes, rice, noodles or barley and some crunchy slaw on the side. Enjoy:)
