Thank you very much Lucy. I trust you had a most enjoyable time with your visitor. It’s lovely to have a youngster around to fuss over. We are in severe lockdown at the moment and my Little mouse had to be home schooled by mum and I one day this week. Even though she had a work book to write in and a tablet to watch the instructions for the lessons it was ‘All hands on deck’ for the day. Lol She is only in 1st class, I can’t imagine how parents manage with older kids haha🤦‍♀️😳 We have been trying to lose a few pounds and I can assure you they were a lot easier to put on than to take off. Slow and steady wins the race and it’s definitely much easier to achieve our weight loss goals with the help of delicious food that doesn’t taste like diet food. This meal is one such meal, that is satisfying, simple to make, packed with fresh flavours and better for you than the deep fried crumbed version. I would order and enjoy this meal in a restaurant so that’s a recommendation for its quality , I think. I’m glad you enjoyed it and thank you for taking the time to comment. We have both had our Covid vaccination snd both got bad headaches from it. I know it’s supposed to keep us safe but we were lucky to get the dose as supplies in rural areas have been diverted to our more infected cities and more densely populated areas. We are not allowed to have visitors, even family, not allowed to leave our local area and not to exceed 5kms within that area. Our state borders are closed snd even front line workers aren’t permitted to cross state borders to work unless they are vaccinated. Many companies are terminating employees unless they are vaccinated.. the situation has become quite dire. Our politicians are scrambling to blame each other. This new Delta variant of the virus is affecting young people and children, whilst a number of elderly people have succumbed to the disease, too many young fit people with their entire lives ahead of them have died also. I’m am fearful for the small children who are accidentally exposed and subsequently suffering long term effects of this insidious disease. Please take extra care my Dear Friend, this Covid monster is going to be around for a long time yet I’m afraid. We have to take as many precautions as possible and look out for each other.🙏🏻😊

@@CheekysKitchen My dear friend , so sad to hear that it is bad for you in your country .. Went out eat at my favorite local Chinese restuarant with my nephew . Almost 2 years since we have been able to eat out , here in California it was very difficult . Other states did not have the lockdowns we had . Things are a bit better now , but we must still wear our mask . A repairman was here last week , I had my mask on , he had his mask on . A wonderful 9 days with Christian and I am wanting another visit from him so very soon . Snickerdoole starts kindergarden on Aug . 23 , she is so happy . The schools are now open here . Thank you for your kind words, Christian’s visit was over way too soon. I’m glad you got to dine out again. I must say my favourite restaurant is also a Chinese restaurant. I don’t go to Indian restaurants because Richo doesn’t like chilli or highly spiced food and I really dislike the strong flavour of cardamom, it is in almost every Indian meal I have ever eaten. The only time we eat Indian is when I cook it and it’s is very enjoyable because I adapt it to suit our palate. You really can’t beat a good steakhouse either but they are few and far between. Richo likes to smoke food and BBQ. It always makes me smile when he says he has treated me by cooking me a BBQ. I marinate and carry the meat to the grill with all the utensils required for cooking. I set the table and prepare all the salads and accompaniments. Fetch the drinks and clean up the dishes. He cooks the meat…… that’s it…..but bless him, he is so proud of himself when he ‘Cooks’ dinner. Lol! I have to admit he does cook the meat very nicely though .🙏🏻👍 We have lots of variety in produce for meals available here. I keep a ready supply of ingredients so I can make just about any cuisine I like. Variety is definitely the spice of life. We are being super careful. Only going out for necessities and choosing those times very wisely to avoid crowds. Although it is inconvenient, the alternative is absolutely not an option. We were lucky to have been able to visit our island state. There was a window of availability to travel that we were able to take advantage of , people attempting to travel before or after the time we visited, have had their vacations cancelled and some have been stuck in hotel quarantine for the duration of the visit at their own expense. The state borders are closed and there are exceptionally heavy fines for people flouting they stay at home restrictions or lying to authorities. $3,000-$5,000 fines have been imposed. Provision for Gaol time for businesses or individuals that do not comply with the restrictions. One young couple had an illegal engagement party and the attendees received $350,000 worth of fines just for attending. It has been quite confronting, the number of people protesting and ignoring the health orders, claiming the pandemic is a conspiracy or a ploy by the government to curtail people’s rights or impose unnecessary restrictions in the meantime about 700 people per day a currently being diagnosed with Covid and that is just in one state here. There are deaths and that doesn’t count the people recovering with ongoing, potentially life long complications from the disease. The selfish, arrogant lack of respect for others is so hard to fathom from the self absorbed individuals involved in spreading this illness, with no thought for the safety of others. It is just sad and unnecessary. I don’t think the world will ever return to normal and I feel sorry for the babies and children living through these difficult days.😟

Yes Lucy, I was so worried for you when this started and your kind neighbours bought groceries and a treat of fresh fruit for you after you had depleted your earthquake emergency supplies. We are an island Nation, this thing was brought to our shores by visitors and returning citizens. Many of these returning people completely disregarded the quarantine restrictions. Without such careless actions our country would have been totally isolated and safe. There have been some staff in aged care facilities working in different locations and spreading this disease amongst the frail and elderly by transporting it from one place to another. Politicians are arguing amongst themselves and not protecting the community, they were elected to serve , quickly enough nor thoroughly enough. Many stores and even post offices now have to employ security guards at the door to ensure people are complying with we code checking in(required for contact tracing if there is an outbreak in that location, during the times you visit) wearing a mask, practicing social distancing and using supplied sanitiser. It not that difficult to do the right and proper thing. It will help stop the spreading of the disease if we are all prepared to put up with a bit of inconvenience. I had so many more international destinations I had hoped to visit, in the future but I’m really wary now to even consider overseas travel. I guess we will have to just wait snd see how things progress before any such plans can be planned.

What a delightful idea mommie- -kins, I really enjoy fruits cooked on the BBQ, we have a Mango tree and Sunday breakfast in summer is grilled Mango, peaches, banana and home grown grilled pineapple, with waffles and yogurt, we call it fried fruit salad lol I think your suggestion would pair beautifully with this pork dish. That’s right Percy but it would be delicious for our non keto diet audience. It certainly saves making different meals for different household members with different preferences and tastes. Cater the same for everyone and the fixings can suit whatever you require.

Oh yes we always make the most of whatever our garden and orchard has to offer. We had an elderly neighbour who would share lovely fresh produce with us and we shared our surplus with his family. He has since moved closer to town and we really miss he and his family. He used to grow these massive really sweet pineapples, Richo’s are about a third of the size, great flavour but they take so long to grow, we need a bigger pineapple patch haha.
