It wouldn't have been hard, so at least on some level, she was bullshitting you with her monologue just before. I say she didn't delete Caroline, she just needed to "save face" a bit by putting on that performance. In her position running the facility she can't afford to become sentimental, even if she actually does realize that you're her friend. So she puts on her "evil, heartless AI" act again while also letting you know on your way out that yes it was an act, and yes she is actually letting you go because you're her friend and not just because it's the easiest solution to a problem.

I mean, if you're asking about why she liked Wheatly, it's because he was cute, funny and tried to be helpful. She liked him before he became a "bad guy". If you're asking why a lot of women are attracted to the "bad boy" archetype, that's mostly because that archetype kind of defined by "confidence" and "drive". It's not so much the morality that's attractive, but the passion.
