I would say that the reason your from photo artworks look like they were done with a real live model is because you treat the production of the artwork as if you were looking at a model and not intending to reproduce a photo (which is not necessarily a bad intention or approach in itself). Trank you very much Stephen! Only 2 questuons- how long should the first Block in dry before painting again on the face (2d Block-in)? And do you apply the light colours thinner to let the canvas white shine through? Ir do you put more white?? Thank you very much. I am painting a portrait of my Muse 👍

The 1st answer is, as long as it takes for the paint to dry. Different colors and oils dry at different rates so it's hard to give a generic timeframe. 2nd is, I add more white.

The grisaille block in should be lighter as subsequent layers will darken the image especially over time

What’s a good commercially available white that I can substitute for the lead white you used for this lesson? Flake white?

Lead white and flake white are mostly the same thing, just refers to the manufacture process. If you had to use an alternative most people will choose zinc.
