Is this only possible for Text Fields? I would like to use this approach the same way for a Classic Report so that the table can be refreshed instead of the P1_RESPONSE Text Field.

Yes, it's much easier with a classic report. On the data source for the report, choose "rest data source" and then it will give you a drop down where you can choose your rest data source. Then if you want to pass in a parameter, you choose an item to submit, and on the left in the rending tab, under the table object, you see a parameters section where you choose which item goes to which parameter.
