That's a good trick to make the potatoes pop like a bubble. I've not tried before, but by looking at how you made them, they look simply amazing. I like how to test the oil. I use a wooden chopsticks to do that too

Hi Priya! They are not sweet potato, but regular potatoes, just with red skin. Red skin potatoes have less starch than other potato types like yellow one. This recipe doesn't work with sweet potatoes!

Ciao Edward! Yes, it works even with larger potato slices, but you always have to cut out the potato skin sides or they won't puff. No, my portable induction cooktop shows the power (I can decide if I want to low or increase the heat), not the temperature.
