I accidentaly finally perfected my low protein version....tapioca flour (as in Chebe, but no need to buy that!), Bob's potato flakes, some Ener-g egg replacer (although you can you a flax egg, too)...it tasted incredible!!!!! No oil needed in the mix, no milk, just water to make very soft, very thick battery "dough". Tapioca starch on fingers to shape. Baked at 450 for a few minutes then put on toppings. I was shocked it was so good..the closest to the real Italian dough I USED to make years ago in terms of taste.

I bet if you covered the potato crust with a layer of cheese first, it would prevent liquids from dripping through and would enable you to add tomato sauce. If not, I would have marinara on the side and dip the slices in that. Great video though. The crust looks like a winner. I might even try an eggless version using an "egg" made from water and chia seeds.
