Puri is a popular Indian fried bread that is usually served with aloo sabzi (potato curry) or chole (chickpea curry). Instructions for Puri:
In a large mixing bowl, combine the whole wheat flour and salt.
Add 1 tbsp of vegetable oil to the flour mixture and mix well.
Gradually add the warm water and knead the dough until it becomes smooth and elastic.
Cover the dough and let it rest for 15-20 minutes.
Divide the dough into equal-sized balls and roll each ball into a thin disc.
Heat the vegetable oil in a deep frying pan over medium heat.
Carefully add the rolled-out puri to the hot oil and fry until it puffs up and turns golden brown.
Remove the puri from the oil using a slotted spoon and place it on a paper towel to remove excess oil.
Ingredients for Tarakari:
2 cups of mixed vegetables (such as potatoes, carrots, green beans, peas, and cauliflower)
1 onion (finely chopped)
2 cloves of garlic (minced)
1 tsp of ginger paste
1 tsp of cumin seeds
1 tsp of coriander powder
1/2 tsp of turmeric powder
Salt to taste
2 tbsp of vegetable oil
1 cup of water
Instructions for Tarakari:
Heat the vegetable oil in a large pan over medium heat.
Add the cumin seeds and fry until they begin to sputter.
Add the chopped onions, garlic, and ginger paste and sauté until the onions become translucent.
Add the mixed vegetables and sauté for 2-3 minutes.
Add the coriander powder, turmeric powder, and salt to taste and mix well.
Add 1 cup of water and bring the mixture to a boil.
Reduce the heat and let the mixture simmer until the vegetables are tender and the curry has thickened.
Serve the tarakari hot with the puri.
