Agreed. So many gnocchi recipes Give a weight Or measure range such as one and a 1/2 To 2 cups of flour . Gianni explains what the texture is supposed to be for your end product. Finally I think I may be able to master the elusive Gnocchi. On my last attempt my partner called them "yuckies" . Never again!!!

Gianni- Thank you for the inspiration, I finally tackled this recipe and the results were outstanding! I decided to wrap the russet potatoes in foil and roast them in the oven thinking this would keep the moisture level down to a minimum and therefore I could use less flour. Since I didn't have a potato ricer or a food mill, I used my box grater on the potatoes - not as fast as a ricer but it worked fine. I also wanted to get some color so I made three batches - one with only the potato, another with a roasted beet added and the last batch with a handful of raw spinach added. I pulsed the additional ingredient in a food processor a couple of times and added it to the riced potato before incorporating the egg, which I separated and used only the yolk, again thinking this would reduce the moisture and lessen the need for flour. For the sauces, I made the creamy Gorgonzola (I added some sautéed thinly sliced cremini mushroom caps) and it was my favorite. As you had experienced, I too couldn't find any decent tomatoes, so in place of your other two sauces, I made a brown butter and thyme sauce. The cooked gnocchi were light pillows of deliciousness and in the colors of the Italian flag; I call this ‘Gnocchi Tricolori’. Thanks again for sharing your expertise and this great recipe.

When I was a boy my grandmother tried to teach me how to make gnocchi. Course I didn't pay much attention thinking should be around forever. I have tried several times and just can't get the texture right. Love your video , so descriptive . I am really excited to try this again. Eating these right now with Pizzaiola sauce. Wonderful and so simple to do too. Amazing how rich a simple tomato sauce can be with just reduction and some herbs. Perfect with creamy potato gnocchi. Mine are unfortunately not as firm as in video, so I'll be more careful with ingredients next time. But still tastes good. Thanks for the videos, Gianni, this is a great channel! In my country, Australia they have a series called Masterchef in which they once made gnocchi. The sauce was a bland butter with sage and other forgettables where they had the tenacity to call it "beautiful". Yet these sauces have elegant simplicity while achieving great taste. The world these days... Great video and something I HAVE tried!

I made the gnocchi with the dolce gorgonzola yesterday. Infused the cream with a piece of chopped ginger, and fresh rosemary and a hint of nutmeg then strained it out before melting the cheese into it. YOU MUST TRY it this way. Delicious! Will be trying the Trapanese next. Thank you Gianni!

Ciao Shawna. I put salt in the blender for tomato/almond pesto. I didn't add salt to the gorgonzola cream sauce because the gorgonzola is salty. Same for the tomato basil sauce, the grated cheese is salty. But a pinch of salt can't hurt. Buona fortuna! I hope your gnocchi turn out well. --Gianni

@stufado1 I'm hooked on Sicilian sea salt for everyday use. I use the sale marino grosso (coarse) and grind in it my salt mill to the texture I need. Currently I'm using SoSalt from the sea near Trapani and Marsala. I also have some sea salt I got from the salt pans at Mohta in this same area. It's really special and I only use it as a finishing salt.

Oh my goodness Gianni...i'm really glad that i found you....i am interested in seeing what else you share here in recipes and i know i am going shopping for the ingredients i don't have to do the sauces....i just know i am going to enjoy ....I love your name...the spelling. . ...and i love that you are authentically Italian...i grew up around Italians...i could pretty well ask..."who didn't" ? lol I was influenced by a lot of European people inasmuch that they seemed to be where i belonged....if you know what i mean...you know....a part of me and me a part of them...even though i was born in Canada...in 1957....Anyway.....it gets harder and harder to find anything truely Italian anymore...I have 1 good store in my city and mostly anything i eat Italian...i make myself...hard to find a good dining out experience here....Niagara Falls Ontario Canada had an awesome family owned restaraunt for many years called "Capri" that was actually quite famous and attracted famous people...actors...singers and such...The Mr. Passed. .....he was a senior man....his aging wife continued with the help of her adult children but the restaraunt finally closed...what a sad day that was....Niagara Falls still has a fair amount of Italian businesses that i frequent when i can get there anymore...one of which is Portage Bakery...have a look at them if you like....I grew up on their bread...best bread ever...the heavy kind...not this stuff they call bread now...full of air and water.....no substance or flavour....Our family lived in a neighbouring town to the falls called Chippawa..then we moved to the Falls...i am now closer to London Ontario.. ......I love good food but i must admit that Italian is my absolute favorite....I follow this sweet Italian woman here at You Tube.... her name is Gina....her channel is "Buon-A-Petitti" or simply type "Italian Grandma makes"...Another one i follow is Pasquale ...channel name is "OrsaraRecipes"...Ok...time to go....i didn't expect to say so much so i hope you don't mind....lol....i like it here...your channel...Thank you for the recipe...i will be back...Check out Pasquale's "Traditional Homemade Tomato Sauce made by Pasqualw Sciarappa" if you like...Miss Ashley from South Western Ontario Canada ...take care...

A friend walked in. "Why not put them in the dishwasher." "Never use it. I always wash them by hand." "How long have you been off your meds" he spurted as he returned to the dining room table.

Once in NY's Little Italy I tried one of the BEST dishes that I've tasted in my life (liked it so much that returned the following day to eat it again!), they were Gnocchi in a tomato sauce. Delicious! I am going to give these recipes a try for sure. Hope they taste as good as those ones I tried just a year before the Twin Towers fell. :(

I haven't made sfinci but I've been meaning to for a while. They're a favorite of my Sicilian friends and are a favorite this time of the year to celebrate the feast of St. Joseph. My roots are in Campania and I have recipes for zeppole and zeppole di San Giuseppe on the website. I'll let you know how my sfinci turns out.
