I make my potato salad exactly the way you do but I thin the mayonnaise out with a bit of milk. The potatoes then soak it up and its delicious.

I grate the onion & eggs in & I use Cross & Blackwell mayo, bc it's thicker. Salt, pepper & no green pepper.
