Hi as I am a malayalee...when you switch off the gas for the eshtew as we call it, you need to add a dash of coconut oil and a few curry leaves. I don't put clove and cinnamon in the eshtew but do add a pinch of pepper

Chitra akka, small request, neenga theriyadavangalikkum pandren nu soldreenga, apo konjam authentic a try pannunga. For example in Poori masala: Kadala paruppu + Karuvepillai thalikkaradhu romba important & green chillies should be sliced and added not chopped & lastly, konjam kadala maavu thanni la mix panniyum add pannanum, to get that beautiful trademark thickness. This is just my observation, nothing personal. Otherwise, big fan of your disciple & quick cooking!
