These look super yummy. I was a little surprised that you used vegetable oil, and a lot of it to cook the onions, carrots, garlic and etc in. I think I would swap for less olive oil with sum butter. Flavor would be better, and veggies would not be oily after cooking these really look delicious.❤

I'm English expat on a French mountain. Looks really delicious, especially as it's no meat, egs and veg. Thank you for the detailed info. I don't know if the onion, etc. mix can be frozen, but I'll try, and make a big dose of it, to be used when needed. I cook for 1, so I need to work out the amounts. And with some cheese on top, yummy, healthy and simple

Looks great. I think I would cut the potatoes in half, scoop out the middle and mash them up a bit, then pop them into the onion mixture and fill the empty shells with that. You can get more filling in the potatoes like that.
