I'm back, still slightly sick but not enough to stop this video. Filet Mignon, meet Sous Vide. The perfect couple, and by perfect, I mean you can’t possibly mess this up! Tender, cooked to perfection, and seared to finish along with an easy béarnaise sauce. This might just be one of the top 5 things I have ever cooked!

Grocery List:
8oz Filet Mignon
Kosher Salt
Cracked Black Pepper
A few sprigs of Rosemary
A few sprigs of Thyme
4-8 cloves of garlic
Half a stick of unsalted butter
Bearnaise:
3 egg yolks
1/2 Shallot, sliced
3 Sprigs of Tarragon, leaves removed to make 2 tbsp of chopped tarragon
1/4 cup white wine vinegar
1/4 cup dry white wine
Fresh Cracked Black Pepper
1 tsp salt
3/4 cup clarified butter
