These aren't scrambled eggs. They're soft, rich, eggy sauce to dip your toast into.

The only way ive ever had any success taking somewhat appealing pictures of food is to take it outside during the day. The bathroom light might do, but then id be taking food to the bathroom.

tried making this today turned out awesome and im super happy i remember when this vid first came out and i watched it thinking to myself that id never be able to do it bc i could barely make scrambled eggs and id always overcook them (im new to cooking) i gave up for a while but i eventually kept on trying and my scrambled eggs got better esp when i used a lower heat and even though it may not seem like a huge accomplishment it is to me and im more inspired to try harder things. thanks kenji :)

I've never tired out one of these for myself before due to not having the ingredients but for a change I might actually give this a shot! Looks pretty simple, and I'm 99.9% sure I have eggs, butter, salt, and yoghurt at home so why not!

Gordon Ramsay. Kenji hates that macho temper tantrum chef nonsense that makes for popular TV viewing, for obvious reasons. People like to romanticise that stuff but it's not necessary and doesn't help the industry.

Wow. I forgot how good a plate of scrambled eggs could be. Thank you. I made these and was instantly reminded of my great grand aunt. Scrambled eggs was probably the first food I was allowed to cook, and as soon as I took a bite of these, I was instantly transported back to my pre-teen years. Excellent.

My wife and I followed this recipe this morning and it turned out fantastic! We used Marbled Rye which was the only change. Really creamy and delicious. We’ve been following you since the beginning and although we all of course want normalcy to resume soon, the more frequent home cooking videos have been a pleasure!

I've only recently discovered you as a chef and KZbinr through constant mention on Binging with Babish. You seem to have a lot of different opinions and techniques than most other famous chefs, and I always find yours to be better. And now I find out you don't like Gordon Ramsay: I THOUGHT I WAS THE ONLY ONE! That's it, you're my favorite chef! An example of your opinion vs others: I keep hearing to start eggs off in cold water when you boil them. I couldn't figure out how they were so hard to peel! Then I watch a video where you say to boil the water first, and like magic I've never had a problem peeling them since I switched. THANK YOU!

@@MeMyOwnSelf Only just started watching him. Is that who he bleeped out? I was wondering. I agree there's a weird clique thing happening with these certain 'popular' KZbin cooks. That's why it's taking me this long to watch Kenji. He seems to have become more humble in his cooking, so I am giving him a chance. We'll see, because the others - Babish, Alex, and Joshua - are wearing thin on me.

I made these style of eggs for dinner last night by using this technique, but added finely chopped jalapeño & red bell pepper and some shredded cheddar for that extra creamy texture. One of my new favorite ways to eat eggs for sure. Thanks for sharing Kenji!

This is how I make mine when I have time, usually on Sundays. I use a silicone whisk, it helps breaking up the curd easier. So yummy, but def not to everyone's taste.

Wow. I've never watched this dude on BonApetit - but his home videos have really kicked it up a notch. Probably THE best home chef vids right now. I prefer this over high production quality with quick cuts that obfuscate what's actually goin on.

Kenji, my God. I tried these eggs this morning. No yogurt, but just the technique itself and holy crap it was incredible. I poured it over ciabatta bread and half an avocado. Then, I topped with black pepper and sriracha. So rich and creamy, and super fast! Thanks. - the 8 percent

I must say Kenji, I have a ton of subscribes..but yours is the only one I have notifications for. The POV way of cooking is a great idea. One question, I just purchased a cast iron pan to play around with and I'd love to see how you care for it and do a proper seasoning. Hope you can show us a video on it. Ok, true confession time, for anyone that has the time to read this. I went through a period in my life where I was in university, about to graduate, but was so disappointed at the way my profession (which I now practice, what it is, is not that important) was perceived by my professors, that I briefly considered switching careers and trying to become a chef. The ONE thing that put my off was all this generally accepted bullying in cuisine workplaces, glorified by people like Ramsey and most "celebrity chefs". You can tell one's snobbishness and how that pours into his workplace ethics even by watching a couple of his KZbin videos; they do not tell you WHY they do what the DO, they're just dismissive show offs and the whole essence of their videos is not "look, that's how you can do this as well", but "look at me, I'm miles ahead of you, this is not a cooking tutorial, it's just me flexing on you peasants". I have never worked in a professional kitchen, nor do I want to, given their operating style. I'm a proud homecook that likes to improve upon himself through understanding WHY I what I do and how I could do it better. The science behind cooking is what drew me to it in the first place. Sadly, because all I watched were lame KZbin videos I got constantly beaten up in the kitchen and I did not know why so I just assumed that cooking is like an inherent trait, which only a select few possess. By accident I discovered Chef John, then Babish and finally Kenji. Because they're KZbin channels that actually bother to explain to you what the hell is happening so you can get a grasp on what you should be THINKING about, other than trying to emulate a recipe, step by step. J. Kenji Lopez Alt (most awesome name I have heard of, btw) guides you on how to develop a "feel" for cooking and that's the most important thing to have, in my opinion when you're alone in the kitchen, just you and the stove. After cooking for years, all I wanted to do was understand the science of cooking and it just so happened I stumbled upon THE channel for that. A big thanks, from me, one of the billion home cooks that are not interested in watching the flex, just about how to eat more deliciously. I really hope Kenji's restaurant has a comfortable work environment, as he claims it to be. Because I truly believe people do not learn how to do something correctly, when they're being yelled at when they screw up; they get better when they're enabled to do something they've already done good, even better. Kenji, keep doing what you're doing, your way of thinking in the kitchen is truly an inspiration. As for the people that defend workplace harassment just cos they're conditioned to think it looks cool, good luck surviving your abusive boss. Lots of love

i feel very similar :> i have always liked cooking but the sea of 'rough edged' or 'flexing' cooks always made me think that if i wanted to do what i loved, i would just have to take the abuse and/or arrogance with it as well. Now after viewing the wholesome and gentle way Kenji is i know ive got other options, and i cant even watch most other youtubers unless theyre kind about cooking as well.

Nice to see that you can also get these without having to add extra yolks or extra butter (for when on a diet) and that it is not strictly necessary to let them sit during 15 min as the book says-

I love all the different forms eggs could take. I’ve tried this with a whisk over a water bath and it had the mouthfeel of eggy hot cream cheese. It was overwhelming but putting it out there if any of y’all are interested in trying it out

I saw this before going to sleep last night and woke up wanting to make them. I used a small amount of sour cream because I didn’t have any yogurt with a toasted bagel. They came out extremely good. Very smooth creamy and cheesy(without the cheese). Highly recommend if you wanna change up your egg breakfast and are feeling adventurous.

@@kkim5000 Honestly just made this dish and it's god damn delicious. The eggs are completely cooked, it's just the curds are so small it comes out like a sauce. The yogurt was simply amazing. And it takes about 10-15 minutes to make! Thanks for your awesome videos, Kenji!

Interesting science regarding the egg and salt. I've heard multiple other famous chefs say that salting the egg first is bad for scrambled eggs, but I trust Kenji.

I really start liking Kenji a lot (watching him daily), but knowing there is more people who dislike Gordon Ramsay and they are high level cooks, gives me hope. Believe me, you don't need to be a dick to people who are trying their best just to get famous, but they (TV producers) know that drama and mental abuse sells. Keep the good work Kenji and thank you!

This is how I like my eggs too. I essentially eat them every day and never get tired of them. I used to think scrambled eggs were for children, but this takes eggs to a whole new level. I don't get this level of creaminess unless i cook them really really slowly. I'll definitely be reviewing this to master your technique.

YESSSSSSSSSS! Time to show this to my wife; I've been using greek yogurt to make my scrambled eggs for years in this manner ever since you-know-who's instructional on youtube about using creme fraiche became popular. Wife loves the taste but feels unsure about my yogurt sub, but I feel vindicated now!!

Because he is a disrespectful piece of shit probably, even if you are creating great chefs by humiliating them and making them stronger, it's a piece of shit of atitude to shout and insult someone just because they screw up something while learning (english is not my first language, sorry about the possible typos) I really hate Gordon Ramsay for all the hate he provides to the industry of food.

J Harjono I think most chefs don’t particularly like Gordon Ramsey due to his attitude, they appreciate his work but don’t like his always angry attitude and his over exaggerated Personality, (Because I think) it disrespects the actual workspace and adds a negative attitude to the normally friendly and stressful workspace, as actual chefs have experience with the workspace and respect it, it may be funny but its disrespectful to the line of work and the constant stress that chefs have to go through day to day as well as the belittling many hard working chefs that have gone through a hell of a lot of stress, Just my thoughts.

Grew up (1970's) eating scrambled eggs mixed with mayonnaise (added to the bowl in the beginning with the scrambling, not at the end in the pan like he did with the yogurt) and they always came out super creamy and soft. Mom got the idea from a Hellman's Ad.

Lol I was so excited a few months ago when my broke uni student ass attempted [redacted]'s version with yogurt, thinking I discovered something new (my brain went Yogurt is creamy, cold, and dairy, should be able to do the same thing as creme fraiche) but hey now I know it has the food scientist seal of approval xD

I've made this type of egg before it pretty good but I've never thought to eat it like that. I first learned of soft scrambled or whatever you want to call it eggs from the chef you don't want to name. After watching Joshua weismans breakfast sandwich video I decided to actually try and make it. It's by far some of the best eggs I have had that I made myself (ma's cooking always seems to be better). I can definitely use improvement on my technique.

I make a similar recipe, sans the pepper, with my preferred herb being tarragon (because the end result is reminiscent of bearnaise), and my preferred dairy being labneh (which I almost always have on hand because it’s my favorite topping for bagels, and can be used in so so so many different and delicious ways)

This is probably my favourite way to make eggs, period, but I learned it by watching that video from "he who shall not be named". I like to start the eggs and butter cold in a small sauce pan and constantly stir with a rubber spatula.
