Recipe for: Kozunak Na Konzi with Lokum. Fluffy, Delicious and Easy. Proven Recipe For Homemade Kozunaci.
Necessary products:
For the dough:
800 g of flour, sifted 3 times
150 ml. warm fresh milk
3 eggs + 1 egg white at room temperature
200 g of sugar
30 ml. oil
The juice of 1 orange at room temperature
Zest of 1 orange (orange part only)
100 g of cow's butter at room temperature
14 g of dry yeast
1 tsp salt
1 ampoule of vanilla essence
1 ampoule of rum essence
For the filling:
250 g Turkish delight, cut into small pieces
To spread:
1 tablespoon of fresh milk
1 egg yolk
For sprinkling:
Sugar
Method of preparation:
Preparation of the dough:
In a large bowl, pour the warm fresh milk, 1 tablespoon of sugar and the dry yeast. Stir and let it activate for 10 minutes.
Add the sugar, eggs, oil, orange juice, orange peel, vanilla essence and rum essence to the yeast. Stir well.
Gradually add half of the flour, mixing until smooth.
Add the salt and remaining flour. Knead by hand until you get a soft sticky dough.
Transfer the dough to the counter and knead until smooth and elastic.
Gradually add the butter, kneading until it is absorbed by the dough.
Place the dough in a greased bowl, grease the dough as well, cover the bowl with a lid or cling film, and let it rise in a warm place for 2 hours.
Forming the kozunaks:
When the dough has doubled in size, transfer it to the counter and divide it into 6 equal parts.
Shape the dough into 6 balls.
Take a ball, roll it lengthwise and put a lokum at one end.
Roll up, press the edges to stick. Carefully twist the wick.
Repeat with the remaining 5 balls.
Braid 3 of the wicks into a simple braid.
Place the braided braid in a pan lined with baking paper. The shape measures 32/13/7 cm.
Repeat with the remaining 3 wicks, placing them in a different shape.
Cover the cakes with a clean towel and let them rise for another 1 hour.
Baking:
Preheat the oven to 180°C fan-free.
In a small bowl, whisk the egg yolk with the fresh milk.
Brush the cookies with the yolk mixture and sprinkle them liberally with sugar.
Bake the kozunaks, in the lower part of the oven, for about 40-50 minutes, until they are golden.
Turn off the oven, open the door and leave the cookies inside for another 20 minutes.
Remove the couscous from the oven and leave to cool on a wire rack.
