You could but that will complicate the overall logic of the flow which makes troubleshooting incredible difficult. Also if say a flow were to fail in the primary one, the it won't affected the secondary.

But why does it need to be built in a separate workflow? This is causing a lot of unnecessary work. Nintex just allows users to set reminders in the very step where the task is being sent. Power platform has a long way to go
