I think he figured out the stars from the beat leader mod on quest. This replay looks like quest so that's my conclusion. The beat leader mod on quest is a bit different from the one on PC.

you want to increase your z-distance in controller settings. would also recommend following a tutorial on how to properly adjust your controller settings if you haven't already.
