For the automatic crystal farm you can make one that is just like an automatic sugar cane farm, so once they grow a certain height the observer will break them. Hope this helps Like this so Joey can see it

The kelp farm is made out of pistons and for the crystals they would just move them one block away, so I don't think it would work
