Prep Easy Sweet Potatoes with Me

Cooking DURING the week can be challenging for our two-career family.
Between school activities for our 4 girls and work, I’ve found we tend to eat out MORE when things still require being chopped, diced, peeled, and prepped.
So, one system I’ve implemented is prepping FOR our meals ahead of time. Washing and pre-chopping vegetables is a staple for my Sunday afternoons and makes it easier to cook on busy evenings.
