Prepper food challenge, bugging out

So i dont love the emergency food buckets, i wanted to make a diy version thats in my car that i can eat like a normal pantry for an extended period. So ive got the shelf stables and im hitting the road as if im running away from a fire or flood and cant get “shopping” for 1-2 weeks and have to live with what’s already in my car ready to go.
I already live in my car full time so this should be “easy” but lets see
