Flours are different all over the country. If you've cooked it long enough, but your bread is on the gummy side, try bread flour as it absorbs more liquid than all purpose. In my country that's no such thing as all purpose flour or cake flour or bread flour - we have wheat flour or rice flour or corn flour or anything like that. I suspect that kinds of flour in your country contains not only flour but some other ingredients like starch or something else

@@ayonashine1203 I'm from the USA. When we talk about flour... 99% of the time we mean white wheat flour. If we talk about another flour we are specific... rice, almond, coconut, oat, spelt, whole wheat, rye and many, many others. There usually isn't additives. One exception is self-raising flour (white wheat) and it has baking powder already added for convenience. In wheat flour there are 3 main kinds that designate how much gluten is in the flour (it's a range that's why it varies). Cake flour has the least amount of gluten and bread flour has the most gluten. All purpose flour is somewhere in the middle. You can do a search if you need more specifics. I made this “cake “ today and it came out great. It took 53 minutes to bake. Didn’t add the sugar on top it was sweet enough and crunchy top without it. I will be making this cake often. It’s simple and delicious.

Made this today and I left my apples just chopped. I also borked it up by adding double the baking powder - oops! And my final messup was I substituted pumpkin pie spice for the spices because ... it's what I had at home! And guess what? It still came out AMAZING and my family is raving over it. I will definitely be tucking this recipe away to use again and again. Simple, easy, CHEAP, and delicious!

I tried making this today with the following modifications due to availability challenges: 1. I used vegetable oil instead of butter; 2. I had no nutmeg so i used 1 tsp. Of cinnamon powder instead of 3/4 tsp.; 3. I used a combination of dry and wet steam for "improvised oven". If you're a Filipino, you know. I highly suggest to use the wet steam method to prevent burning the bottom. Check your cake after 30 minutes if it's done. If not yet done, check every 10 minutes. Don't forget to use a clean cloth for the lid, you don't want water to drip to your cake; 3. I used a 7 x 3" baking tray. No spillage; 4. I used 170 grams of unpeeled Fuji apples, and added some raisins and toasted peanuts. Walnuts are expensive here. Result: really tasty! I can't wait to try this recipe using a real oven. Edit: i had the bread cooling but when my son saw it, he demanded to have some. It was that good! Thank you John for your wonderful recipe. To those who wanna try this, go and do it ♥️

I made 3 of these this week and they turned out fantastic! I used a regular loaf pan and a smaller one like suggested and they both work great! So, don't worry if you don't have a small one. Also, I used ground Allspice because i didn't have nutmeg. It was still wonderful! Definitely try this.

Instead of sugar on top before baking, I brush a little melted unsalted butter over the top and sprinkle with a little sugar AFTER baking. Nice touch! For banana nut bread, I do the same only sprinkle on a combination of sugar and ground cinnamon.

I made this and it was DELICIOUS! My husband picked WAY too many apples when we took the family for an annual apple picking. I did have the larger loaf pan and backed off 5 minutes from the cook time and it came out perfect! I will be using the rest of our apples to make this again and again and again!

I actuslly baked this bread yesterday. It was sooo good. Very moist, and so eady to put together. I baked the bread in a KA loaf pan, in my Instant pot Omni convection oven for 45 minutes, at 325 degrees…Perfect❤ I’m taking this wonderful bread to my church’s Easter breakfast. ❤

Just popped one inti my Omni convection oven.. The batter is so yummy. I am practicing for our traditional Easter breakfast, at our church. I am also taking a delicious banana bread…sour cream, and dark brown sugar…My mom told me to always use dark brown sugar. Since this Apple Bread will be served to lots of people, I used raisins, instead of nuts…and will add a yummy rum flavored glaze. Thanks so much for all of your great recipes..❤

I love the idea of keeping the paper over the butter while melting in the microwave, I usually put a paper plate over the bowl because it does explode, and then the butter all over your microwave makes a mess but that’s a good idea

This recipe worked beautifully. I didn't have walnuts so I chopped, buttered and salted pecans which I roasted and covered the top along with some caster sugar and got a thin and salty/😁sweet crust. I also used Granny Smiths. They were so flavorful. Thanks so much for this delicious yet easy recipe. And it does go better with coffee than tea. :)

Just made this! Ohhhhh is it yummy! I accidentally forgot to roast the walnuts, so instead of putting them in batter, I sprinkled unroadted walnuts on top and then sprinkled torbinado sugar all over the top. Used two medium granny smith apples 🍏. 2/3 grated and the rest chopped in chunks. My son said he was glad I didn't put the walnuts in the batter and on top instead, the bread was so light and moist and the nuts would have ruined it. Make this bread! Make sure you use tart apples! It's a great tartness with the sweet, walnuts and crunch on the top. Really exceptional recipe!

I make this, but, I cheat and use canned apple pie filling, it works lol, however, after seeing this recipe, I'll try fresh apples. Also, I use a simple 1/3 flour, 1/3 brown sugar, 1/2 tsp cinnamon, 2 tablespoons butter for a quick streusel filling. It freezes super well in slices, and a great lunch addition. Your recipe looks much better though, and excited to try it.

John, I made this Apple Bread just as you specified but I did use Cortland Apples. The bread baked and rose up perfectly and was very moist, not gummy at all. However, it didn't have much of an apple flavor to it. I could certainly taste the spices and the walnuts were a nice addition but if you did a blind taste test, you could have sworn it was a Zucchini Bread. I would appreciate your thoughts on what I could do differently to generate a stronger apple flavor to this bread.

Love this! I used to make this throughout the year, and used apples often in baking, sometimes in a loaf like this, sometimes in muffins, or in a 9x11 or round cake layer for a weeknight sweet. As you pointed out, in baked goods apples and zucchini have a similar effect: they bring moisture and add a nice texture to the crumb if you don't use too much, but apples have more flavor, and add sweetness and slight tartness that zucchini lacks. I used to puree a fresh apple to add to baked goods when I wanted to cut back on some of the fat.😉(🤫) 🤷 This looks so good. Great with brunch. A single (divorced) person, I don't bake much anymore, but your channel is still fun.
