The acid in the marinade was the key to the deliciousness of your recipe..I used the cod I bought this morning before watching the video..drats..will definitely do tilapia next, but the recipe will work for shrimp as well! These look great. I have made fish tacos before but I've got some good ideas to implement from this video. One thing I do that I've never seen anyone else do but that I enjoy is to wilt my cabbage. I slice it thin and then douse it heavily with salt and let it sweat for maybe 10 minutes or so. I give it a quick rinse and then squeeze the water out of it. I love the texture of this. It ends up being softer than just raw sliced cabbage but still has a lot more texture than just lettuce

I love your recipes. As a Mexican who grew up in Texas; my mom taught me to heat tortillas on the open flame too. Never thought of using tongs either 😅. Using hands to flip the tortilla on an open flame it’s just a skill that’s passed on. We’d probably get laughed at or teased if anyone saw us using tongs 😂.

9:20 Couldn't agree more. We visited the US - the Keys, and the first evening there, we came across a food truck where a mother and daughter were selling authentic Mexican food. I bought a lot, and loved each thing. My husband was eager to show me Taco Bell, and said that what I was having from the food cart was not as good as Taco Bell. Well, a few days later when we visited Taco Bell, I did not like a single dish, because having tasted the authentic food first, I could not develop a taste for the fast food version of Mexican food. So totally agree about how the fast food joints cannot provide that authentic taste. I wish I had gone to that food truck every day that I was at the Keys. 💙
