FOR THE PEOPLE THAT say it is dangerous , I will simply say I have done this for 45 years for my family and we have never been sick from it. BUT I have always use the garlic I grown or organic fresh garlic, it take me a day just to clean the garlic take the skin off by hand, I prefere the russian garlic because it is big and easier to clean. Then I make sure the jar have been clean with boiling water and dry in the oven. I do the garling like you do but I put some oil as a chop the garlic, then i fill the jars with garlic very tight and make sure there is no air bubbles and then on the top i put about 1 cm of oil I put the lid on and put them strait in the freezer. I make small jars like jam jars, whe i use them i live in the frig and always top with oil every time( extremely important) Because we are a big family that eat a lot of garlic a jar does not last long No body has been sick so far, and everybody love our garlic pizza. For that raison only it is very handy to have garlic this way, and let me tell you the one you buy does not taste like this.But ,personnaly I would not buy garlic already peeled l do it fresh I want to make sure what Use is the best at the begining, but that is my preference ciao

I watched your video and then proceeded to peel by hand a whole bunch of garlic while watching tv. I am so happy to have learned this really great lesson! Thank you so much for sharing. Your videos are very inspirational for me. I had a stroke 8 1/2 years ago, and it took about 5 years for my brain to unscramble. What was locked in my brain before the stroke is still solidly in place, but now I have to have things repeated several times before I feel like ‘I got it’. I get to rewind or replay your videos without having to bug someone to repeat themselves over and over again. Thanks again.

But I always have a hard time sinking in my memory the correct way and procedures to do thing right that I have to constantly repeat the instructions over and over and over until I feel I understand it enough try it. Same for videos . Thank God for rewind capabilities. Sucks and so hard being SEVERE ADHD AND MAJOR COMPREHENSION DISORDERS!!! And confidence.

I hope after chopping your garlic that you didn't rinse your food processor right away. Throw some stale or toasted bread in there first and give it a quick pulse, you'll have instant garlic infused croutons ready to throw in some soup.

Store the garlic with white vinegar for 2 days in the fridge (garlic's low in acidity this method will boost it) then replace it with olive oil. Don't just throw away the white vinegar afterwards, it now has a garlic-ish flavor & it's good for salad dressings.

I am born and raised in Louisiana. we have always done this with our garlic. As a child we would shop for vegetables at the "French Market" every Saturday. I still preserve it this way. I am now 60 y.o.!

Linda, I love your channel! I had garlic to preserve last year and I whirred up the the garlic and olive oil to make a paste and froze it in ice cube trays, then put in a ziplock that I could pull out and use easily. I want to emphasize to others that you said to "refrigerate" this which is important. Garlic stored in oil at room temp is very risky for botulism because of the lack of O2 and temp. Thanks for sharing the great ideas and recipes.

if you use white wine vinegar it will keep in the fridge for up to 4 months. preserving in olive oil is ok if you freeze it.

I have seen how to store whole garlic cloves and first thing to do was to soak the peeled cloves in vinegar for two days. After the two days you can drain the vinegar and add the olive oil then store in the refrigerator. I'm a little leery about going straight to the oil.

Those who are pointing out the valid concern regard C. botulinum but still want to preserve your garlic, simple change the liquid from oil to vinegar. White (plain) and red wine sounds like they would be terrific. And so now you don't have a concern. Also, someone mentioned UofC article about garlic infused oil, within the text of article it says to add citric acid (or lemon juice) to the garlic oil combo to prevent botulism spores.

Great video. I do it differently. I take them put it in the blender add a little water, blend it, put it in bottles and fridge it. It works great. I make a few bottles and it hasn't got rotten so far. When I'm going to cook or season my meats all I have to do is take out a spoonful. It beat opening garlic every day. lol Here's another thing that can be done with eggplants. Garlic & juice

On your Basile my mom would wash and dry, make sure no moisture and then put in jars every 4-5 layers shake table salt and put it in the freezer. You could put flat in freezer bag or contain. Peel a few leaves off for sauce they will be soft due to salt. I will try your garlic idea looks like it would work.

We grow and preserve garlic, however, we never use oil alone. You need to specify that leaving garlic on the counter can cause botulism and must be kept in a controlled refrigerated temperature below 40f.

That's neat! I've also seen whole cloves stored in oil, as well as sprigs of rosemary, thyme, etc.... I don't know how long it lasts. But, you do get flavorful oil to boot!

garlic is low on acidity and olive oil cuts off most of the oxygen, this is a recipe for bacteria fest. At least add some lemon juice or cider vinegar to increase acidity.

Go to UC Davis-garlic to see safe ways to store garlic. In oil in the fridge is not safe and opens doors to botulism. Easier to chop and freeze anyway.

i do this with all my garlic but i keep it in the fridge . so far its never gone bad on me yet . i also use half olive oil n half veg. oil . i use it in many dishes but use less garlic so i also can use just the flavored oil if n when i want to . i have had a jar in my fridge for at least 6 months n it is still good !!!! i also buy it fresh n peel it myself . its time consuming but very worth it . have a great weekend .

Hey Jen! Peeling garlic is way easier if you leave the garlic in a bowl of water until the skin isn't dry anymore (about 5-10 minutes). Greetings from Austria!

I freeze the fresh chopped garlic I make in olive oil. It's only safe in the fridge like that for a short time. I have had it change color and get nasty. ( but i learned ) i am now slicing and dehydrating and then storing in jars for cooking, g powder, g salt..etc.

Hi Linda, FYI: Per a food Channel show last week: If you put oil in the fridge and it does NOT set up, you have not been sold real Olive Oil. Apparently 25% of all cooking oils are fraudulent...some veggie oils are mixed with motor oil ! So even though it would be nice for the Olive Oil to not get solid, I will be looking to make sure mine does.

I dehydrate a lot of garlic at a time. Then I keep a small jar of it covered with oil in the fridge. When the jar is empty, I just take more dehydrated garlic, put it in a jar, cover it in oil. I never run out.

Garlic is a very low acid food which will spoil in the oil. After you chop it up fill the jar with garlic and then fill with white vinegar. Leave in fridge for 2 or 3 days to bring up the acid level. Drain and use the vinegar in salads and such. Then fill with olive oil and keep in fridge to use.

@@joloooo Because you are not heating the oil almost any oil will do but remember there are different hardening levels in oil. Coconut oil will harden a lot making it hard to get out of the jar.

Linda, I too have heard about the botulism involved with garlic in oil, so to keep safe, use it in the shortest time you can. I love garlic and we use a whole bulb every time we cook so I buy 3-4 lbs for the month!!!! Keeps the vampires away (aka cold bugs)!! Good for blood pressure too and other goodies.

OK Linda, so it has been more than a year since you did this. Can you end all the conjecture about whether it would work or not and give us a report. Did this method preserve the garlic in usable condition in the frig for a year or longer? Are you still eating from this garlic that you made here? Did you keep any for a year to see if it will last? And most importantly, would you preserve garlic this way again?

I'm so glad you changed you recommendation to freezing this. I have worried about this since you posted it. Since I was afraid I upset you when I commented on eating home canned chicken without cooking, I didn't comment. After all, botulism is in the soil. You can't prevent putting it in jars. That's why we process everything.

i do the chopping in the processor then i fill lil condiment cups like the ones hot mustard comes in when u order chinese take out. i buy them at iparty. anyway they pop right out of the cups frozen and defrost in the pan in seconds. i dont put oil in with them just raw minced garlic.

You need citric acid to make safe! Soak over night then drain and put in oil can be kept on shelf!

I'm going to mince garlic and ginger and mix it thoroughly with sea salt and see how long that will last in the fridge. It should last for months; certainly longer than putting in oil. and safer.
