Joe, I had a similar issue in a room with bad grounding. Do yourself a favor and cut the breaker to that room and check all the outlets to make sure the ground wires are all screwed in tight. I found one where the wire was completely off, and screwing it in solved the problem.

How have I missed the De Ess with the stock comp trick?! I feel so silly... I've never found a de ess plugin that I really liked or found that easy to dial in (I've been mudding by with the Waves Sibilance one but I'm a luddite and find it quite confusing sometimes) and it's been in my DAW all this time! Nice video as always, but I have to give a big thumbs down to the song. Now I know I'm not right about this Joe because music is subjective, and what you did here is basically the trend of what people do now. They take a beautiful old song and as soon as there's a lovely chord change, they think 'ooh, we don't do that anymore, I need to replace that with a much more bland sounding chord'. I absolutely hate it. There are so many great old 8 or 9 chord songs that have now been blandified down to 4 chord durges. Now I know you didn't go that far on this one. I love what you do. I love Studio One and your Videos. This is not a criticism because music is subjective. I just find it difficult to sit on my hands when people scrape their nails down the blackboard of my out of date musical tastes. It's not you, it's me. 😊

So there's no need of a metronome in this situation where you record only you're voice and the guitar but what if later you say oh i want to add some percussion and other instruments?

It's relatively easy to create a tempo map based on Joe's original tempo (without affecting the audio of course) and then use that tempo to sync a delay or add some percussion loops.
You're not using a di box with your guitar it should get rid of the hum
