Leisa,I went to a canning class at our Vo-tech today. I couldn't believe the unsafe practices she taught!🤪 I'm so,so glad that,when I started seriously canning,I found you! At the class today,one lady asked me why I was there! Lol Our teacher had never canned meat,but was teaching pressure canning where she grabbed the jiggler off her cooker just after it was done to hurry it up!! Oh geeze! Don't think I'll be going back for the second class! I canned ugly chicken and taught my daughter and friend how to safely do it. Everyone asked me a thousand questions. At least we all got print outs of the NCFHC...😊

I would go back with the information from the NCFHP and question her about it and why she feels it is safe to do it her way and not the their way. I would be worried about the other people in the class. Is she a master canner, hope not. At least when you ask a question here you get the correct answer and if Sutton does not know it she knows someone who does.

I found Mom’s jars in a thrift/junk shop. Left with over 30 jars, mixture of mom’s, square vintage mason and vintage ball quart and pints. $.25 each🤗. Sometimes we just fall into an expected treasure. Thanks for the refresher on broth!❤️

Yesterday I took the carcass of a rotisserie chicken, 2 bags of vegetable scraps from the freezer, put them into my Insta pot with water and a splash of vinegar for 90 minutes. I strained it, put it into 6 pint jars, pressure canned and it looks just like yours!

I've only been canning for a few weeks, but today I opened, and ate, my first can of 'ugly chicken'. It smelled amazing! Tastes great! I was nervous at first since it's my first time canning and eating what I have canned myself. But I feel so proud! And it was amazing to have a quick meal too. Thank you for these videos!

I'm with you, there are better things to worry about. I'm not one that needs all the fat and all the solids removed. Chicken broth was my first canning project. I was so paranoid so I canned them for 90 minutes and then afterwards freaked out because I didn't debubble 🤣 I was afraid to touch them for like a year until I learned more

I decided to can some chicken broth with a cheap 10 lb bags of leg quarters from Wallyworld this afternoon. I started them on the stove in large stock pots then looked up your recipe. Well, I just left the kitchen having moved one of the stock pots to my instapot, and the other into my Carey which also luckily pressure cooks as well. Thank you for the idea! I should know by now to check your website when I am about to do something new. You know the drill, having been canning all of 2 whole months, sometimes "know what I am doing" without actually "Knowing" what I am doing! Leisa, you are a life (and time) saver!

Leisa, I canned bone broth today too and used the ForJars lids. I know they are premium quality just like Ball used to be years ago because in recent years I never got that ping-pong-ping with the lids canning broth with Ball/Kerr lids. The ForJars did the ping-pong! Made my heart so happy. Your broth is so pretty. Mine had a lot of carrot peels so it is more orangey-colored.

I love doing this because the flavored bone broth is like$4 fire a cup. The boxes of bone broth here are $3.67 so it's kinda worth it to me to do this plus it just seems to taste better

I wanted those carrots after you cooked them for two hours in that broth and onions. They probably would have tasted sooo good. I love carrots. This broth looks really good. I think I would like to cook my rice with it instead of water. Yum! Great video

Gosh, Leisa! I never could figure out why my jars syphoned so much . I always let the pressure come down naturally. Then you said to let the giggler do a slow hula dance. Heck! Mine was doing the Jitterbug the whole time! Once I adjusted my heat properly, No more syphoning! Thank you so much for emphasizing this impotant tip!

The timing on this is great. I bought whole chicken on sales and just roasted 2. I got the leftover meat off bones and now have bone in roasted to make broth. I plane on canning all up.

I’m glad to know how to do this. I made chicken bone broth once and I struggled to strain it to get all of the bits out. I wish I had saved myself that trouble.

Crazy! Lol. I started mine yesterday. Will be canning it today. Wish I could get those lids. I've tried emailing the company but those canning co lids you suggested prior are working well for me. All seal every time so I'll probably get a few more boxes of those for the next few years. 😍😍

Thanks Leisa I've never made bone broth in my Instant Pot. I usually use my big Nesco and do three chicken carcasses at a time. That will give me a case of chicken bone broth quarts. I love Costco's rotisserie chicken for meal shortcuts and then the gift at the end with the carcass.

That's so funny, we had the exact same meal for dinner tonight also, as I made bone broth yesterday, but decided to use the whole thing for chicken soup, we had it last night & tonight, 2nd serving was better, I guess letting everything blend overnight, we love chicken soup, it was the 1st time I made bone broth & it was so delicious 😋.

Looks good, I recently had my re-entry into pressure canning and did it with chicken broth, I add everything under the sun to it, plus a bit of fresh ginger. It was pure perfection and the session went so easy I kept telling myself, you got this, wonder who I got that from.

I drink a pint of bone broth every morning (with my coffee and Zipfizz). I don't appreciate greasy lips in the AM so I use a degreaser pitcher thing. It's name escapes me, I'm 74, that's allowed. But I love that gizmo. I jar up in temporary reused spaghetti type jars and refrigerate weekly.

Leisa - you can use a SLOW COOKER or an old Coffee Urn to make your broth (the ones with the spicket) too! Your Instant Pot slow cooker option can be set up 20 hours, find any old pot lid that fits it to rest on top if you don't have a glass lid.

I Love having broth stored up. Home canned tastes so much better than store bought. I canned a ton of chicken broth in Jan. what type of meat bones do you use to can beef broth? I used deer bones this year to have my dark broth.

Your butcher will be able to tell you the best beef bones for broth. I rely on them. We don't use venison bones due to the CWD that is possible in our area.

Heat the cold stuff back up or add 5min to canning/cook time. At least that's what I was always told.

Have to do more broth before the temps rise. I cool the broth in the garage overnight so I can remove the fat.

LeAnn from Mennonite canning (can't remember her exact site name) decided not to put vinegar in her pressure canner and she said her rings came out much better. She put vinegar in her water that she was washing the jars with to get rid of some of the cloudiness. I have found that when I do not use vinegar in my canner my rings come out much better. Interesting thought.

I didn’t know about the vinegar at first. I still can’t get those first jars cleaned even with straight vinegar. We have really, really bad water here so I do put about a tablespoon in the canner.

I have another way of skimming the fat if you are in a hurry. Take paper towels and lay over the surface of the broth, then remove with tongs. Repeat as necessary to get down to the amount you want to leave.

Question.. people make chicken broth and beef broth. But I've never seen people mix chicken and beef bones to make broth. Is that a no no?

I throw all of my bones in the pot plus eggshells (though usually pork, not beef); works for me

HELP!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! TONIGHT, I LOADED CANNER, DID THE 10 MINUTE THING AS ALWAYS, THEN MY JIGGLER WAS PUT ON, .....THEN..... A HIGH PITCH SIREN NOISE LIKE A SMOKE DETECTOR CAME OUT OF MY CANNER!!!! I HID BEHIND A WALL BECAUSE I THOUGHT IT WAS GONNA EXPLODE. I TURNED OFF HEAT AND ASKED MR GOOGLE PANTS WHAT HAPPENED AND IT SEEMS THAT THE TEMP WAS TOO HIGH???? I TRIED LATER AND HAD TO REDUCE MY HEAT RIGHT OFF THE BAT BECAUSE THE SIREN THING STARTED TO HAPPEN AGAIN....... IS THIS A THING? I JUST STARTED TO CAN 6 MONTHS AGO SO ITS NOT FAULTY EQUIPTMENT AND I DO THE SAFETY CHECKS/BABY MY CANNER. WHAT IN THE WORLD IS GOING ON ???

Did you check to be sure the vent pipe was completely clear?

Sounds like you need a new gasket. Try coating the gasket with a light coating of oil, return and try to bring up to pressure again. If that doesnt work, a new gasket is needed.

I had this happen and called the number that came with Presto canner.Right away she said that she knew what it was.She told me to check underside of lid for loose screws and she was right!❤
