Today we are Pressure Canning "Pretty" Chicken. What is Pretty Chicken? Pretty Chicken is delicious chicken that has been cooked in the instant pot before pressure canning in its own beautiful broth.
Pint time for canning is 75 minutes and the Quarts process for 90 minutes.

Great to see another canner that cares about the appearance of the food. We really eat with our eyes first. I’m also one of those that has to line up my lids with my jars. Very nicely done, I’ve been canning for 50 years and started when I was 15. Fantastic to see a younger generation taking pride in home food preservation.

Thank you for the kind words! I have helped a few friends locally get started, and I hope my generation takes hold of the idea that we need to be able to prepare our own food. My age group of women is pretty reliant on the grocery stores, and 2020 taught me that they are not a guarantee. We are actually going to raise our own meat chickens this spring, and I plan to put a lot do it on the shelf. Thank you again for watching, and I appreciate your kind words! Too cute at the end...nope Mommy, I didn't touch it. Thanks for the video..I'll give this a try next time. I just used the last jar of my raw packed chicken and I must say, it's the smell that gets to me. I hid the chicken in some corn chowder and tricked my hubby into eating it. LOL. He keeps telling me he hates canned meat...He just ate three bowls of the chowder so I guess I win!

I didn’t like the raw pack smell either, so I feel you there. I also find these chunks of meat are much better in the end product. Baby girl likes to be involved, even behind my back! 😝 Thank you for watching! 💕

Nice video. I agree with the other commenters who don't like "ugly chicken." To me, It's well worth the extra trouble to pre-cook it a bit. I only pre-cook mine about half-way, but that's enough to keep that gross-looking stuff from forming during canning.

I got some chicken breast to can for the first time. I was going to raw pack it but I had some concerns about whether my family would get weirded out by the way it looks. THIS method however looks fantastic in jar. I think I will try it this way to get them used to eating the home canned meat before I raw pack lol.

Raw pack was a bit off putting to our crew, but they eat this often! I used it a couple of times in my Pantry Challenge Week 1. Failure is in the title, so look for it, because I used it for chicken salad and chicken noodle soup. Thanks for watching, and good luck!

Beautiful family and nice looking chicken. Thank you for the title stating that this is not an official Canuary video. Maybe next year it will be. I appreciate your safe canning practices, as well. One question, does the chicken come out of the jars as tender as with raw pack?

I put that in the title because I actually AM official Canuary this year! This is just in addition to my 2 for Leisa. I did a seared pork, which is love, and will have a grape jelly with honey coming next Friday. It comes out amazingly juicy and tender. That is why I don’t plan on getting this canner. Have the same problem with my mixer and that was very frustrated. Don’t need that with a canner either.

Can I offer a tip? Grab one flat of pints and one of quarts per month until you have as many as you’d like. It definitely helps to not have to buy all at once! Thanks for watching, and I’ll see you back soon!

Thanks, I’d like to try this method. I think it probably works best with dark meat. I don’t have an Instapot so I’ll have t o research other cooking methods. I enjoyed your video !

I’ve seen people do this with whole chickens, shredding and deboning before canning the entire chicken. I’d say more broth will come from the dark, but both should work. Thanks for watching!

When you can't your chicken did you add any seasoning to the jar? I canned my first chicken breast several months ago and added 1 different seasonings to to each of 12 jars (not all in one jar) to see which seasoning tasted better or which I liked better, though I live alone. I have some to my sister and so far she's tried the one with Dan-O's and she said she really likes it. I was just wondering. But they do seem to be great for those quick dishes.

@@jimjordan5630 I have done with and without seasonings. I prefer to keep my seasoning simple in the jar, and spice it later to the recipe where I’m using jt, simply to keep the flexibility in tact. Sometimes I want Mexican, sometimes Thai. Other times I want a nice chicken salad. Sticking to salt and pepper leaves all options on the table. Thanks for watching, and I hope to see you back soon!

What if I don’t have an Instapot? Can I roast a chicken and cut it up - use my homemade canned broth to top them? And your daughter is so dang cute. What a big helper.

Yes! You can do it however you’d like. The Instapot just takes it off my mind because it’s a really hands off process. If you’re curious about one, always check the FB marketplace. They’re often super cheap, because some people don’t use them after they make the initial purchase. That said, we use ours 5x a week, at least. I actually have visions of a 2nd to make processing chicken faster. 😬 Thanks for watching, and the kind words! Let me know if you have any additional questions!

I like the taste and texture better this way. It’s just personal preference. You can slightly under cook it, and it finishes in the canning process.

Do you find that the chicken this way is drier than a regular raw pack method? I am terribly afraid of making dry chicken because I have a hard time swallowing drier foods like white meat chicken and bread. This does look so much better than the raw pack meat though!

Not at all. If that is a concern, you can always cut your chunks smaller to get more broth to each piece in the jar. This chicken remains super moist though.

How long to cook it if you don't have an Instapot?

You can par cook, meaning not fully cook it, and do the same thing. You can also do smoked chicken in a similar fashion. It doesn’t have to reach 165 internal to be done, since it’s going into the canner, where it can finish up.

Why did you can those for 90 minutes? I was always told to can pints for 75 minutes.

Because I used the quart time instead of the pint. Kiddos running around while I was verifying times, and I definitely went over instead of under, which is the side of caution that I tend to err on. Thanks for watching!

I just did this in the instapot and saved the broth but had to freeE the freeze the chicken. I did get several meals out of it which was nice and the broth turned out good. Can’t wait to try canning it this summer! Do you know if I would be able to can after it’s frozen?
