I always see the Cornish hens at the market. Never knew how to cook them till now. Great for cooking for two.

I would really appreciate a video how to make a gelatinous broth from old stewing hens or roosters. In my pressure cooker no problem but in my instant pot I never get a gelatinous broth and tender stewing hens, no matter what setting I try. I’m desperate. Thank you very much for your valuable time and help

Whenever I want a "gelatinous" broth, I make sure that the chicken is cut up so to expose the bones more (the source of the gelatin) and add about one TBS of white or cider vinegar! The vinegar won't add to the taste very much at all but WILL help leech out the gelatin from the bones!

@@moogie1954 thank you very much for your response. I always do that anyway, breaking up the chicken and adding apple cider vinegar. If I make it in the regular pressure cooker for 70 minutes the broth gets really thick and gelatinous and the chicken is still edible too. In the Instant Pot, on the other hand, it doesn't work at all and I have no idea why. I also always have the same chickens from the same farm and the broth from them always gels. i'm really desperate

I *think* it may be the psi the Instant Pot cooks at. I do my bone broth with planned over bones for 4 hours on Soup low pressure along with a splash of apple cider vinegar. However, if I don’t also add raw chicken feet to the mix, the broth does not gelatinize. I do it so long for the break down of the bones and I use the same bones to make a second batch with fresh raw chicken feet added. I then take those bones and process them into bone meal for my garden. I don’t think you need to cook the broth as long as I do if you add the raw chicken feet to it. If the idea of the feet skeevs you out, I have heard raw backs or wings also add gelatin. Try adding some to your recipe and see if it helps.

The great thing about Cornish hens is portion control. One per person with minimal sides; for two, just split them down the middle.and serve with generous sides.

I just ran out of my BTB Garlic and must buy more. Also, I smear some olive oil on my measuring spoon and the BTB slides right off into the mixture. I also use my mini whisks to blend. It it weren’t for PressureLuck I might not have discovered BTB.

Even the reduced sodium BTB tends to be too salty for me, I prefer to salt to taste myself. I know I can use my homemade bone broth for the cooking medium; could I use roasted garlic cloves in place of the BTB in the garlic Parmesan sauce with the raw garlic? Also, I understand broiling the breasts for that long may dry them out, but could they be done for maybe 3 minutes after the backs are broiled?

My first Cornish Hen was at Top of the Rock, Chicago 1958 at a National Awards Dinner 4-H Club Congress. Instructions eating and length of time consumed…if you’re hungry‼️🤣

I've made some soups at a restaurant I cook at using Better than Boullion on your suggestion and they were always a hit. Using it in this video shouldn't even be considered product placement because the product is that good. I'm not being paid for this comment.

I have a question Jeffery. I have seen you use only a cup of water or broth in the instant pot but on the instructions I have it says you should use 2 cups. So is 1 cup enough?

It looks like a wonderful recipe, except for the Better than Bouillon products, which are sponsoring you for this recipe. I'm not a fan as they contain sugar, maltodextrin, & msg which is why they taste so good! But those are harmful to our bodies & especially our brain, even the organic versions. I hope they reconfigure their products to healthy organic versions without harmful chemicals that hijack our brain, then I will buy them. The food industry can be so deceptive by using cheap ingredients to add flavor, rather than producing wonderful products that truly nourish the body.
