This bread has been full of rich flavours. The Einkorn almost tastes a little bit nutty, very different than every flour that you find today. The extra charring from the pan adds really great dark flavours to the bread as well. You can of course also use your own stove at home to make it, no need for a bon fire 🤣

People still make a similar bread where I live. Its called "bolo de sertã". Its usually made when people stay on weekend/holliday sheds with minimal kitchen supplies available. Some people do a 50/50 corn/wheat recipe while others do 100% corn. The cooking pan is traditionally made from clay, but when that is lacking cast iron is also used.

Some other ways that einkorn could have been baked 5000 years ago would have been on the end of a stick, as well as on a flat rock. Dough can be braided in 2 strands around the end of a stick to help it stay secure. That makes me want to try it! Thanks Hendrik!

Hendrix you are fun! 5,000 yrs ago cave cooking - not so sure how relaxing it was- more like pulverizing the seeds with rocks, rubbing sticks together for fire, flour and water only, maybe some salt, no oil, and cooking on a stone. Your videos are always fantastic and very educational.

Fantastic! Basically what I have for breakfast every weekend. Cinnamon, raisins and walnuts, freshly milled flour and sourdough starter left overnight and baked in the morning. delicious.

Cool. Now make Matze that is kosher for Passover. It is tasty once you make it with einkorn or spelt. Modern flour matzah if vile - I know this from way too much experience.

Really interesting but strange not to hear you speaking as you usually speak a lot !!!! This looks similar to the thick pancakes I make with my leftover sourdough starters. In UK we use an ancient flour called Spelt which was brought over by the Romans about 2,000 years ago. Your dogs are beautiful, which breed are they please ?

no, no, no and no bread on cast iron needs to be cooked low and slow, dry heat, fat IN the dough not on the outside!
