There ya go. 5 hours in the smoke then finish in the oven, especially in 20° temps. That prime looked great, cut like butter with the yellow clipper, and Mrs HMB approved. What more could you ask for. Great cook

Hey Phil! Yep.......just wasting fuel after that point anyway. Got some sleep.....and didn't have to worry. It was even easier than using a stoker. :-) I give all the credit for this cook to the animal........it was a good one. Sometimes you get lucky. I think I'll be using my oven more in the future.........just look at all the thumbs down I got for my video already. I Love it......people are funny! LLLLLL

Hey Root Boy, At my Costco, a whole Prime Brisket is $3.29/lb and the one I took a pic of the price tag was 14 lbs, now price that out compared to any deli meat, the lowest cost that I can find is around $8/lb. and that is either head cheese or bologna, floor sweepins as I call it. So it might be worth while to look around. Jay

Looked good! I've given up on doing whole briskets. I can never get the flat tender and moist at the same time. Winco sells just the point (choice or better) so that's my go-to if I'm hankerin for brisket.

Very nice cook! I finish in the oven all the time. One suggestion: get yourself a long scimitar to replace that electric knife. Using an electric knife on a perfectly cooked tender brisket kinda takes away from the quality of your cook job. Just a personal hangup of mine so feel free to ignore it.
