Buy a Froenster knife , German made , 6" semi stiff blade , it's called a boneing knive, they are great ! Enjoy , stay safe ! They are well made , 2 choices wooden or hard plastic handle .

Great video, very informative ! I didn't know about the pork fat addition. I've had venison ground meat that i think had the deer fat in it, and I didn't like it too much.

Yes, a nice thin blade for that detail work - and cleaning off the silverskin. Do you find a big difference curved or straight? By chance I bought curved boning knife but have not had the opportunity to test it out yet. Peace.
