Consider freeze-drying a vegie mix (carrots, onions, zucchini etc). This mix would be great to use in making broth, soups, meatloafs, meatballs, pasta sauces and stews. I buy mine as I have a small household/larder. But this mix makes for easy meal prep!

I was going to suggest freeze-drying them too. They'd be shelf stable, and quick to use. You could even make carrot powder for smoothies.

My grandma kept the carrots in her garden. Therefore she digged a hole and filled the bottom with sand. Then she put the carrots on the sand. And Covered the carrots with sand. Again a layer of carrots and a layer of sand. So we always had carrots throughout the winter. I remember it was a lot of fun for me (60) as a child to „harvest“ vegetables this way with my grandma. I just learned this recently, but you can make your own baking powder easily. 2 parts cream of tartar, 1 part baking soda, and 1 part cornstarch to prevent clumping. :)

Baking powder and baking soda are both baking essentials. Depending on the specific recipe, you may need one or the other (or both). They are often used in making cakes, muffins, cupcakes, or any baked goods. In case you run out of it, did you know that you can make baking powder? Just combine 1 tablespoon baking soda and 2 tablespoons cream of tartar, and voila - you already have a homemade baking powder.

Yes! Excellent info. You should have seen my moms face when she asked if I had any powdered sugar because she was short 1 cup and I promptly blended up her some out of regular sugar. You literally could not tell the difference, lol. She was like “are you kidding me?” 😂. Nope. And I make my own brown sugar like Becky. I buy one sugar and it makes three. Love having this new recipe. 🙏

If you change out the cloth in the bags of carrots in the fridge every couple weeks that will also help extend the life of the carrots. It takes all the condensation away from the carrots. A dry cold carrot is a happy carrot lol. 🥕

Can you use the dish cloths that look like a sponge??? They also have some that are thinner and are cheese cloth looking- would these work?

@@krisirolfe4332 I don’t see why not. They all would work in the same manner to get the moisture away from the carrots. I’d say as long as they are changed for a clean dry towel every couple weeks it should work just fine. It also helps to get out as much air as possible in the bag when storing in the fridge.

Next time you run out of baking powder you can substitute 1/3 cream of tartar and 2/3 baking soda. I hate when I'm out of something I thought I had plenty of.

@lovemyfamily60 it isn't odd. She and Josh said long ago they are not showing Baby A in videos. I think they are being smart, especially with the world we live in. Is her private life not everything needs to be shared. Baby A is well-tended too. We only see a small portion of her life in videos. :)

For the other carrots that you have left, why don’t you diced them and freeze dry them and create freeze dried soups with noodles and seasons in jars for you and Josh and just add hot water. I love following all of your progress is of harvesting and everything that you’ve done I’ve learned a lot. I appreciate you taking your time putting this together.

Becky and friends . Baking powder is just baking SODA and an acid. for each teaspoon of baking powder use one quarter teaspoon of baking SODA and half a teaspoon of vinegar or lemon juice. put the liquids with the liquids in the bowl and the baking Soda with the flour salt etc (the dry ingredients) ... and how about canning the carrot broth? you can add it to any soup or dish that can use a bit of sweetness. Hi Becky. Just a little helper I use is I put the whole colander in the boiling water then move it to the cold water. Saves a step of spooning them all in and out of the hot and cold water 😊

You might enjoy Vietnamese pickle. Main ingredients are carrots, green onion and Dikon radish Add chili's if you want some heat Shredded or julienned. It's a sweet pickle and is awesome on sandwiches. Also seeing as you enjoy soups and stews why not freeze dry all your veg for your soup and then add protein and broth when ready to cook. It would make a nice gift if you put it in Mason jars

I flash freeze directly in ziplock bags. Just set a timer every hour for the next five hours and squish the bag to unstick anything frozen together when the timer rings. No transferring from the cookie sheet. This works great for veggies like onions, peppers and even ground beef. Soft fruits I still freeze individually on cookie sheets.

I just had to tell you. I don’t like canned carrots from the cans either. But we canned home canned carrots and they’re wonderful and not mushy. They have a wonderful flavor. Sometimes I serve canned carrots with a cheese topping. Yumm. Love your videos.

Becky, you should freeze-dry some of the carrots! Once reconstituted, they will make great baby food.

My mother used to make a pasta dish with elbow macaroni, chopped meat, diced carrots and onions and tomato sauce..salt, pepper. Delicious and your ready prepped diced carrots would make it really quick to prepare. Not only do we put raisins in carrot cake but, coconut and nuts, too! Love your generous spirit, Becky. Cakes look great so good.

Keep fresh carrots in a bucket of fine sand in a cool place. They last for many months. Use a tub for scrubbing carrots clean them into colander to save water as others have suggested. I'm a raisin girl here. Thank you for all your hard work, I know what it takes to make these videos! You're an amazing woman!!

You have an almost one year old son and we’d never know it. How do you keep him out of sight and sound? Having raised three children I had them under foot constantly! 😅 Love the pickled carrots. 😋 And before anymore people remind me that Becky stated that he wouldn’t be appearing on video doesn’t mean that he ceased to exist or that she ceased to be a parent.

You can get SouperCubes in all different sizes. They are silicon molds and reusable, so not wasting bags. I got the one cup molds. There are four on each mold, so four cups of frozen whatever. I froze shredded squash and shredded carrots. When frozen, just pop them out of the mold. I had the same idea of freezing for chocolate zucchini bread, carrot cake, and others. The molds come very small up to 2 cups and are handy for freezing a variety of things. Saves space in the freezer. You could get molds the size of you garlic mounds and not have to put cookie sheets in the freezer. Very handy!

When mashing potatoes you can add mashed carrots to the potatoes. So good!

I love that combo! I boil them together in one pot, drain and mash it together, makes clean up easy with one less pot to wash.

​@@laurenparnass8343 I'm from South Africa and this is a staple veggie for us. We boil the potatoes and carrots together in a pot with all our seasonings and when soft, we mash it and add butter and serve. We also eat potatoes and green beans the same way. It's very delicious this way.

Hi Becky. Your thought process on carrot size for storage is correct. The smaller crops tend to have issues sooner than the bigger ones. So larger items for longer term storage is what you want. As far as carrots, I would have left their tails on for storage. That also helps them last longer. Great crop!!

Hey Becky, very delicious is pumpkin carrotsoup with little meatballs and carrotmash. Both eaten a lot in Holland, your mother in law probably knows it and can tell you how to make it! The soup freezes beautiful so something to make with all the ingredients from the garden 😃 i also love oven roasted carrots with honey and thyme , Moroccan Couscous or Tajine with carrots and pumpkin . Nice recipes and something new to learn

Suggestion for washing large quantities of produce. I put mine in the sink to soak in a water & vinegar soak. A good amount of the dirt will come off on its own and since vinegar has antibacterial properties it is a great way to ensure you don’t anything you don’t want. Also, had you thought about making baby food?

The instant pot has an optional basket which is perfect for blanching. Saves water and time and moving veg around. Also handy for hard boiling eggs and pasta too.

Hey Becky! I have freeze dried carrot cubes for soups, and they reconstitute perfectly. I’m doing shredded carrots next. Freeze drying will save you some room in your freezers.

I have freeze dried diced carrots and grated carrots also. I blanched them for a minute or two before freezing and the color has stayed bright orange and beautiful. My storage room is very dark so no light hits them. They reconstitute very well and taste very fresh.

They reconstitute by adding liquid. You can use water, broths, or just throw them in the dish you’re making to take up some of its liquid

You can use a lot of those carrots by juicing everyday. Mixing ginger or celery or whatever with them is very good. I went through 25 lbs in 2 weeks.

Then use the expelled pulp and mix in a bit of salt, garlic, herbs + make separately a mix of water and chia seeds and let them soak an hour, they will gelify and act as a binder. Mix all together, spread thin on a dehydrator tray and you have veggie crackers.

Old recipes for carrots is a carrot casserole were you peel then slice the keratin of queens make a white cream sauce in a skillet by melting butter, adding flour thickening with milk a dash up, bake salt and pepper etc. then pour it on each layer and top it off with the sauce, and covered in foil and bake its very good. Another recipe is to use a meat grinder to grind carrots and dried shelled peanuts. In equal portions. Add raisins then drop mayonnaise in to moisten the mixture. If it doesn't taste sweet, then go ahead and add a little bit of sugar and stir. It's really good.

Hey Becky. My favorite is carrot cake. When I make mine though, I put a can of crushed pineapple in it and pecans. Once cooled i top with a cream cheese frosting. It's soooo good and stays very moist. It can be frozen as well and once unfrozen it's as good as the day it was first made.

Warning ⚠️⚠️⚠️ Hot peppers may be mild or sweet at the tip, the heat is farther up the pepper. My husband found out the hard way one summer. I had gotten a plant at the nursery that just said "hot pepper". Didn't say what kind. So i grew it, waiting to see what it would be. It look like a nice fat green jalapeno . We let it grow a little more, it started to turn purple. My husband picked it and bit off the tip of the pepper. He complained that it wasn't hot at all. I went inside to get us some ice cold beer. When i came back outside i found my husband bent over, sweat pour off his bright red face. When he could talk, after downing a whole bottle of beer. I asked him what happened? He said he popped the rest of that pepper in his mouth and it was like he had popped a red hot coal instead.

Becky please please please consider writing a cook/preservation book!! You could do according to vegetable and tell everything you make out of it. More efficient way of preserving, not to mention all the creative uses you have for vegs that i never think of! Please!

We LOVE Muchas Gracias’ pickled carrots!! Here’s my take (per jar): Carrots, Onions, Sliced jalapeños…Boil a pinch of salt, pepper, garlic powder, celery seed. Two pinches of oregano and cumin. About 3/4 cup apple cider vinegar, 1/2 cup sugar, 1/4 cup water. Layer veggies in a quart jar, pour hot liquid mixture over, seal, and refrigerate. Easy and quick, and a great side dish/snack/sandwich addition! Love your inspiration!!

hi again. keep in mind that any cake or bread recipe can be made into any shape. sheet pan flat, muffins (cupcakes rolls) layer cake or a huge cake. I've even taken a chocolate cake recipe and made them like soft cookies (I didn't want to wait for the cake to bake for an hour.) of course you need to adjust the baking time for size, just look at a recipe for muffins, jelly rolls, layer, bundt or sheet cakes All the best Jim

Becky has said previously that they plan to basically follow the “baby eats what we eat” model. Meaning that you just feed mashed and soft foods from the table to supplement nursing. My daughter did the same, starting with avocado. They were on SNAP for #1 and received a lot of jarred fruit & veggies, which went into smoothies and sauces.

If you put a paper towel in the top of your wet like items in your sealed bags. Gets the moisture from getting where you seal. I also make my bags really big. Then after I use I wash the bags and keep using them. You get more use out of them. 😊

The majority of heat of jalapeños comes from the seeds. have you ever made carrot soup? Yumm!! You can purée some carrots like you do pumpkin. Trust me, so good!! Just found your channel and I am binge watching, you are just fantastic!!

If you save a tablespoon or two of flour from the cake and use it to coat the carrots and nuts before mixing them into the batter.. it will prevent the carrots and nuts from sinking towards the bottom as it bakes.

I always smile when I see you’ve uploaded a video & you always make my day a little brighter. NOTE: Kitchenaid has a dicer attachment for their stand mixer. It is a huge time saver in the kitchen & is great for potato & other root veggies. I feel it worth the cost, as like you, my family likes them in pot pies & soups, etc. Have a joyous day.

Becky, you could use the colander in the bowl to cool the carrots and just lift all of them at once in colander instead of fishing them with the spider.

I freeze the bulk of my carrots, prepared differently, of course. Some are cut into coins for soup, some shredded for baking, and some diced for a quick stirfry. I love the convenience! Becky - try red wine vinegar for the pickled carrots. We use that for our fridge pickles.

Becky, unless you just don’t like the bay leaves, if you would leave one leaf in each jar, it will help to keep the vegetables crisp. Or a grape leaf will work also. These are soooo good, I make them.

In Brazil we make carrot cake too, but in the blender and with a brigadeiro topping with chocolate powder, condensed milk and butter ❤ your cake looks delicious too and the carrot harvest is a true blessing for the first year of growing in the new house ❤

Hi Becky. Bumper crop this year. Well done. I’ve always found that diced carrots are fine frozen without blanching. I sometimes do a trio mix of onion celery and carrots as a basic savoury base for recipes.

On the Becoming a Farm Girl channel she has a canning recipe for a delicious carrot soup, and she gives several variations for serving it. I can’t remember which book it’s from- I think it’s a Ball recipe. The baby would probably like soft canned carrots, so maybe a small batch for him, even if they are too mushy for you and Josh.

Now I want carrot cake. I had a recipe for carrot cake that called for raisens, drained crushed pineapple, and pecans. It was really good but dense. I like the idea of dividing into bread pans. Thanks Becky.

I use melted butter instead of oil. It makes it easier to digest. The last time I made cream cheese frosting, I used an entire cube of cream cheese instead of adding butter to that at all. It was delicious!!!

I love so much that you show when you are problem solving and debating the merits of doing something one way or another, that you experiment to see what’s best etc. You show your mistakes and successes and I think it’s so valuable for people who are just beginning to see that things aren’t always perfect and that everyone but them knows exactly what to do! You have inspired me to try to plant garlic, potatoes & tomatoes! We live in an apartment so can’t have raised beds, but yesterday I planted 5 organic garlic cloves in a large pot. I’m going to try to grow potatoes in laundry baskets with cardboard in them. In the spring I’ll plant a few tomatoes in pots. Thanks Becky! 😊

To make baking powder using baking soda, combine two parts cream of tartar (potassium bitartrate) with one part baking soda (sodium bicarbonate). If you don't plan to use it right away, you will want to add some cornstarch to keep it from clumping.

16:56 if ever you run out of baking powder again, consider making your own. It is very easy, and it ensures freshness. All you need is baking soda and cream of tartar and cornflour.

This is almost exactly like my grandmother's carrot cake recipe except she always used a bit more cinnamon. We love cinnamon. She always put hers in a bundt pan and did the cream cheese frosting on top with more pecans sprinkled on top of that. I've done the recipe in muffins before too and froze them. They turned out great. I would grab a few out to thaw whenever I wanted some. We wouldn't really eat a whole cake before it went bad. Also great warmed up in the wintertime with coffee in the morning 😁

Pickled carrots are so good . I grew up on so many pickled vegetables along with a cauliflower, carrot,pearl onion mix so good. Also a must try is pickled carrots with jalapeños so I was excited to see you add them.

You can add a jalapeno to your carrots it will give a heat to the jar and it's amazing 👌 It very simple we put carrots jalapenos silce lemon salt vineger and water et voilà PS sorry for my bad english i hope it's ok😊

My mom is 91and somewhere I have her recipe for carrot cake I know it has crushed pineapple and chopped pecans. She no longer cooks .but we always test her memory on her cooking and raising 7 kids. Lol

Becky - the difference between the taste of store bought canned carrots and your home canned carrots is like night and day. There’s an even bigger difference with the varieties you can grow at home. You might try canning 4 or 5 pints and seeing if you like them. My family adores them.

I am team raisin in my carrot cake, but it’s because I’m allergic to nuts so I adopted a recipe when my kids were little and I do carrots, raisins, and apples and I do cinnamon and nutmeg and sometimes if I’m feeling fancy a little bit of allspice in the mix to make it kind of like a spiced carrot cake Being as I’m allergic to nuts, the raisins, add that depth of flavor that the nuts would add.😊🙏💜 Ps I love your videos.

I get so home sick when I watch you work, I would LOVE to be there with you, me washing the carrots and topping the heads off, I was the "prepper" for mama, I would get all the jars clean the veggies ready so she could be doing other things, it's one thing I miss with mama gone, me and her canning... wish I could be there to help with the prep and clean up.....

One thing I do that makes blanching just a tad easier is to have a designated colander inside my ice water bowl, I dump the veg into the colander, swish them around a bit to stop the cooking and then just lift the colander up and the veg is already all contained. It's simple but it beats scooping them out little by little. ♡

I have the Avid Armor chamber sealer, so my favorite way to preserve up carrots is to make huge batches of carrot ginger soup (or any soup or stew). I cool the soup down first and then pre-package the soup into vacuum bags and lay them flat to freeze in the freezer. You can either sous vide the soup in the bag or let thaw in your sink, then open and warm in individual microwave-safe bowls for super fast prepared soups and stews. Check and see if your Avid Armor has the vacuum seal hole, and you can purchase their vacuum seal hose and canister set. That should allow you to do extremely quick pickling or marinating under vacuum, and your pickling/marinating is done in no time. No more waiting hours for pickling or marinating your meats as the vacuum will pull the pickling spices and marinades inside of the food super fast! 💙✌️

Great preservation ideas! Something I’ve loved doing is sautéing a large batch of shredded carrots and shredded/thinly sliced onions together in olive oil with a little garlic. Then freezing them. These bags are SUPER helpful later to just add to a soup/stew/stir fry or a sauce. Saves so much time and Im a mama like you to a two year old boy and these types of freezer ready foods are lifesavers and time savers ❤ Happy cooking!

Pickled carrots are one of my all-time favs!! I got a commercial-sized box of baby carrots a few months ago, and as long as they were free, I experimented. They're AMAZING on hearty salads, as a midnight snack, on a cheese tray..... oh mannnnn. So good.

If you have never made carrot souffle then you need to try one. It is wonderful. We make it often for a side dish around our area here in south Alabama. And I am right there with you on no raisins in my carrot cake.

Little tip... when vacuum sealing products that has liquid (like the carrots) if you flash freeze them before sealing them in the vacuum bags it helps them seal. .The liquid gets sucked up into the machine when it is sealing and this causes a false seal.

Yes carrots and apple is a fantastic juice. Try adding a small amount of parsley. The color from the parsley is so intense. Just needs a few sprigs.

My aunt stored fresh garden carrots in plastic bags in the fridge by first rinsing them in a dilute bleach solution and letting them dry. She washed and peeled them before using. They lasted for months. The small amount of bleach killed all fungus, mold and bacteria that would have caused them to rot.

I'm liking raisins in my carrot cake, as well as pineapple. My local taco shop has pickled carrots with onions and peppers. So glad you showed how easy it is to make it. Loved your carrot salad. My mom used to make one with parsley instead of cilantro. So that brought back fond childhood memories. I also do not care for canned carrots. I sometimes prep a small amount of carrotsc cekery, and onions and just freeze them in a ziplock bag to have on hand for a soup. Have you ever freeze-dried or dehydrated carrots?

Your carrot cake must be a Northern thing as mine does not have pecans in the cake but in the cream cheese frosting. I make mine in cake pans and I had a hard time finding a cake carrier that would hold it. It is my mother's recipe from when I grew up. I use to take them to the office for every get together we had at the employees request. One of the girls at the office took a piece home for her daugher and husband and a friend tasted it and offered me $50.00 to make her one. I nearly stroked out. I love watching you cook and bake with things that came out of your garden. I am a country girl and I wish I did not live in the city because there is no room to grow what I grew up with. Keep it up girl!!!

Team raisin all the way!!! We love them. Our carrots, like our potatoes, were pathetic! Not sure what I did wrong. I'll try one more time before I give it up. As of right now, the garden has been put to bed (ready for winter) and my canning supplies are back in the basement. It always feels good to get to this point. I'm going to try the carrot cake in the loaf pan. What a clever idea.
