I have been freezing tomatoes for more than 20 years. To shorten your work time even more use the tomatoes right from your freezer. I double bag the tomatoes, lable the bags with date and use the oldest first. When making chili or spagette sauce etc. just take a tomatoe and hold it under warm to hot water for about 10 -15 seconds and the skins slide off. Then core the stem from the tomatoe and toss the frozen tomatoe into your chili or whatever your cooking. The taste of the tomatoe is so fresh like in the finished meal. Good luck.

This is just what I do, but i stem, quarter and vacuum seal them. Skins slip right off and u can cook with or process fresh tasting tomatoes whenever. Plus they last forever when vacuum sealed.

I used this process over the summer since we did not have a lot of tomatoes become ripe at the same time. Last month we finally processed all our tomatoes, making tomato sauce when we had the time. It worked wonderfully. Thank you for such a great idea.

Why thaw them out? Mine frozen tomatoes just get dumped into a similar container then I just put hot water in the container, let it sit for a few minutes, then the skin falls off -then I cut te tops off and toss them into a pot, still frozen, stew them till they super hot. Then they get water bathed. They go from freezer to preserved in about an hour and a half

i put ripe whole roma tomatoes in my freezer and later roasted whole garlic heads in the oven then took out the tomatoes to thaw but not all the way. I cut the tomatoes in half and scooped out the meat into a jar and was able to gently puree using only a fork. I aded to the tomatoes the roasted garlic clove meats and added a bit of cold pressed olive oil and my goodness was blessed with a. delicious paste that made anything i cooked with it anazing from meats to veggies amazing. I planted tomatoes in our old alpaca pen this year and thus had toms coming out of my ears too! I was out of freezer space & cans, so I sliced them and put them in the dehydrator. I kept one batch in chunks and the other I pulverized to make tomato powder which is WONDERFUL in stews and soups. A teaspoon gives the flavor of 20 tomatoes!!

Food processor or coffee mill. I keep my in a Tupperware container in the fridge & it's been 6 months now and its still good. I think I could keep it at room temp too or freeze it for an even longer shelf life.

If you had taken a little bit of time on the front end you will save a lot of time if you are processing it for diced or stewed tomatoes. By dipping the frozen tomatoes in hot water it will peel itself. Then thaw them as you did. And don't toss your skins. Dry them and make tomato powder. The seeds you can save or toss

That CucinaPro works fabulous. I processed 20lbs of thawed frozen tomatoes in no time flat. My mom got it for me. I didn’t think much of it when I opened the box but I was pleasantly surprised. Cleans easily and very little waste if you run the fruit through three or four times. Very efficient especially for the money.

Great advice, thanks for all the info. Regarding the pulp/seed-skin separator, I saw one video where an Italian grandma put the seeds and skin through a second time and got more pulp out of them. I think they were cooked first, but this seems worthwhile to maximize the harvest.

My mother always did this with the end of her tomato crop over 40 years ago. She had a huge 1/2 acre garden and canned or froze the family's veggies for the winter. She did exactly what is described here, you can pull out a few or a lot. I did this with some of my end of season bumper crop, but I also had chickens and they were very, very happy to help get rid of the extras o any blemished tomatoes. I have canned them a few months later when I had time.

I make tomato puree in my food factory and fill up in ice cubes to freeze before bagging them and it's easy to grab a couple of tomato cubes from the freezer while I'm cooking. But I like the idea of freezing while tomatoes and will try that next time. This time I'm also going to try my hand at making tomato ketchup and that can also go into the food factory for a quick whizz and then strain for seeds and skin. That is happening tomorrow morning! I have the same device as yours but much smaller and I used it for juicing fruits but found it very cumbersome to use.

Sarah yrs. ago I discovered it was easier to freeze any tomatoes I had left over, fall came I took them out cored the tops ,dumped them in warm water in the sink, waited a few minutes then held one at a time and squeezed it out came the tomatoe leaving the skin in my hand. Very easy and efficient.

I do slice in half, sprinkle with seasoning and roast em in the oven... ohh they’re soooo good right out of the oven BUT... once cooked it’s CERY easy to pull off the skin and throw the tomato part into freezer bags for later!!! 👏👏👏😁😁💗💗

We grew 300 lbs one year and I threw them in the freezer whole. When I wanted them for sauce I just took what I needed out, dropped them in boiling water for a minute and the skins just slipped off. Then I cooked the tomatoes and made whatever sauce or soup I wanted. Easy.

I too had a bumper crop. 290 tomato's from 6 plants. Rinsed them, bagged them and froze. Held three under hot water and removed skin. Put in blender still frozen. Then in pot and made chili. Tasted awful. Just ordered a press like you'rs. Hopefully , thawing first and running through machine will solve the taste problem for my chili. Thanks for you're help.

I do recommend taking the stems off before freezing this year. The REASON WHY is that I dehydrate the seeds and skins then coffee grinder them into a powder. This powder can be used to make tomato paste, flavor to soups, pizza sauce….. haven’t tried it yet but I bet it would be an excellent addition to a dry rub!?!! Hate wasting things and those skins and seeds are still useful and tasty!

We have a strainer like that but it's called the Victoria Strainer. We have an all metal one and it's really sturdy. We've used them since I was a kid and I'm 67 now.

i love freezing tomatoes first. Yes got the idea from you. But found out about the water and the rest of the process on my own. When they thaw most of the water comes out. I let them thaw in my 5 gallon stock pot. It takes about 3-4 bags of tomatoes. But they thaw over night. I pour the water off, then run them through the food mill, cook them down and have wonderful tomato sauce. I even freeze them if I have time to process cause I love how well the water comes out. Another thing i do is put a drill on the handle of my metal food mill and let it turn the handle. It turns a 2hr job into half an hour. Life is much easier now :) ...this year I already have 8 bags in the freezer (i have 2 freezers) and apprx another bushel of green tomatoes ripening on paper on my grow center shelves

Thanks so much for your informative and lively tomato talk. I really enjoyed the two of you in the kitchen. My mind boggles with the amount of tomatoes you grew. Now there's some work!!! I just have a few comments. Food grade plastic is not all plastics. It needs the correct number on the bottom. Tomatoes should not be stored in metal containers nor cooked in cast iron. They contain acids. Tomato seeds are a great source of roughage but I understand there are some times just too many of them. Skins do not digest so peeling toms is a great idea. Keep on posting. You're a great presenter!

I started freezing my tomatoes after watching this video last year. I don't disguard my peels, just cook everything till I have the consistency I want then run them through a mill. That way I do get the vitamins of the whole tomato. Then store as I want.

I see so many people talk of peeling tomatoes before making sauce or juice and I do not understand that. Tomato peeling has the vitamins in it and makes the juice thicker and better tasting---I am 75 and learned from my mother and grandmother, boil tomatoes with peeling on until soft, run thru a MILL to grind the tomato peeling and juice thru and remove the seeds at same time. Thick juice, thick sauce. Just as she has done in this video

What process would you use? I understand how to get the sauce, but not the juice separated, from my quartered and frozen tomatoes.

the skins are not safe for canning though; under a microscope they resemble that of an orange peel and can hold onto bacterial spores which could grow to create botulism toxin. Peels must be removed for canning to reduce bacterial load

I started freezing my tomatoes, a few at a time, when my kids were little (about 40 years ago). However, I didn't have nearly as many as you do, nor did I process them further, except to take them out of the freezer a few at a time to use when I made soups or stews. (I was thrilled to find that the skins slip off easily under running water!) Your method is brilliant, and I wish I'd thought of it way back then. I don't have any tomatoes this year, but it's something to remember for next year. Great video!

FYI, my daughter and I made tomato sauce by putting complete Roma tomatoes excluding the stem by throwing them into our vitamix. In a few minutes we had very thick sauce to add herbs and spices and cook. I am 70 years old and used the old fashioned way like you are. Find a vitamix on Facebook sale site for $250.00. Best way we have found to make sauce.

Sarah, you could use your Kitchen Aid for this process with an attachement and run it through twice, the skin and seeds will be almost stone dry, and it goes so fast, you will be done in 5 minutes. It discharges the waste in a small sausage string that you can just reprocess a second time to get every bit!

Been doing this for years, only, core them first, throw all of them into a huge pot, add some salt and cook them on a boil for 2 min. cool squash them down put in freezer containers and if you size them right (containers) perfect for cooking. This works well with cherry tomatoes too.

You really need to get a Victorio Strainer/sauce maker. I got mine from Amazon after years of borrowing my friends...makes dealing with tomatoes so fast. Quarter your fresh tomatoes, put them through, and the seeds & stems are sorted away from the glorious sauce, ready for water bathing or freezing. Also, remember the tomato water is full of flavor and nutrients-add it to your soups, many ways to use it. I loved the comment about dehydrating the skins-dehydrate the skins & seeds together for added protein!

Well, don't tell him he was right! Lol! Just kidding. When I was working full-time, I would dice up the raw tomatoes and freeze them for later processing. This method with the whole tomatoes is even easier. I wish I'd had the courage to try it back then.

I have done this for many years! I put mine in a sink full of hot tap water. They thaw quickly, and the skins slip right off. For larger batches you could pour hot tap water in your tote, though you may need to change it out as the water gets cold with that large a batch.

We do the same thing with peaches, apricots, etc... drop the frozen fruit in hot water a few at a time according to your recipe and the skin falls off... proceed with your favorite cobbler or make some jam...

Kitchen aid makes a attachment called a food strainer that works really good ..... seeds and skin almost dry when they come out.... saves you a ton of time ;-)

Great video. I did this last year but peeled them when still frozen by putting them in cool water and rubbing right off. However, I washed and cored them before I put in freezer. this year I will let them thaw to get rid of more juice. We do that when there's a great deal at the store. We don't have a garden, but still want to save money. When the tomatoes are in harvest we buy them at the cheapest price and freeze them whole. Then we get them out as we need them to make salsa or chile for our food.
