So, if the extraction is too fast, it turns out sour? It needs to be exactly at 30 seconds and 40 grams out, for it to be a smooth and sweet shot? How can you dial this in on your machine to avoid this, and is it repeatable, or was this just a fluke? Did the machine somehow get over-pressurized?

30-35 for me .. and yes very repeatable… everyone has there own taste so tune your machine how you like it

The Profitec Go is just so hyped over KZbin and so overrated. Build quality and finish are poor. When making an espresso the whole machine vibrates and rattles thus causing a huge noise. The driptray is brittle and great chances that the solder points will loosen. And the Profitec Go is not user-friendly at all. Full of quirks and shortcomings. The Bezzera Unica is a far better choice. Or at a somehat steeper pricepoint the ECM Classika is a perfect choice. Stainless steel boiler and other high-end features.

I read someone actually returned a Lelit Mara X (supposedly great build quality) and exchanged for a Profitec Go (they said the build quality is much better)
