The implementation of dairies into areas that did not have the area to allow proper management of cattle manure lead to milk contamination that in turn contributed to the introduction of the pasteurization. Another example of blaming the animal and their product without acknowledging the fallacies in the management of the animal. Management matters.

The expression of lactase is programmed to change over time; already in the eighth week of gestation, lactase is present all over the mucous membrane of the small intestine; then, its activity increases until the 34th week and reaches its peak at birth [ 6 ]. After the first few months of life, the lactase activity begins to decrease, sometimes until it disappears. In humans, a considerable part of the population maintains lactase activity for all of adulthood, whereas in other mammals, maintaining lactase activity is unusual [6].

Paleo, and many other fad diets, can be good starting points. However, as someone learns more, there is the realization that almost every "diet" has limitations and no one diet can be applied dogmatically across all of the population. What is a universally sound dietary position is to eat real food and listen to your body to understand what works for you.
