1. I've never seen a Z-Move miss before and I'm pretty sure they're guaranteed to hit as long as the target doesn't raise evasiveness. The base power of a Z-Move is based off what move it's used "on top of". A Shattered Psyche on top of Psychic is more powerful than a Shattered Psyche on top of Confusion for example. Z-Moves still count as either physical or special and Attack/SpA and Defense/SpD still apply. 2. None of them are guaranteed OHKOs. They just have a very high base power. Guardian of Alola is a unique case though, in that it always takes away 75% of the target's remaining health. Coupled with a good enough priority move it's basically always a two-hit KO I guess. 3. Protect moves can be used to block Z-Moves, but they don't work perfectly and only reduce damage by 75% instead of completely blocking damage.
