With respect to harvest wouldn't it be easier if the permanent structure would end at the high of the hips?

Maybe. My experience is a lot of the one or two year old branches get heavy and bend towards the ground anyway.

@0:38 From the color of the fig, it looks like Kadota or Adriatic. But Adriatic fig usually has branches in white color, so I guess it's more likely the Kadota fig.

You fig tree could be a Desert King. I have a Desert King in ground. the breba crop is main crop, the fall figs are smaller but sweeter. Green outside and pinky inside
