I think that tart stamper would work well with a round cookie mold. That way you have a clean edge and you can control the depth of the press as well.

I love you Louise, you come up with the best recipes. These sound amazing. I love pumpkin pie and pumpkin is so good for you. If you ever get a urge to try something like this using Splenda Stevie in both white and brown sugar, i would love to know your thoughts and how it worked out. Thanks so much! For the pumpkin filling I think artificial sweeteners would work fine. In the cookie itself, there is chemistry at play with the sugar so I am not sure how they would turn out. I don't use artificial sweeteners that often because of the aftertaste. However, I use them in coffee every day and it's fine, but for some reason in food I don't like it. LOL I do like Swerve the best, but when I tried to make a creme brulee with it, it was horrible.

Would it work well to do them in a cupcake pan without the papers? Or would they be too difficult to get out?

I tried it that way and while you can pop them out with some kind of an edged tool, it was a little too time consuming in my opinion. I also did them in the muffin pans with liners and they didn't always cook correctly.
