Pumpkin Spice Maple Granola

3 cups old-fashioned rolled oats
½ cup raw unsalted pumpkin seeds
½ cup dried cranberries
½ cup chopped nuts of choice (I used hazelnuts)
¼ cup neutral-flavored oil (I used avocado)
¼ cup maple syrup
2 ½ teaspoons vanilla extract
1/8 teaspoon salt
If you prefer you can use 1 tablespoon pumpkin spice
I Used:
2 ½ teaspoon cinnamon
½ teaspoon ground nutmeg
Scant ¼ teaspoon ground cloves
½ teaspoon ground ginger
Instructions:
Pre-heat oven to 300 degrees F. Adjust oven rack to the middle position of the oven.
In a large bowl combine oats, spices, salt, and nuts. (You’ll add the cranberries when the granola is completed baked and cooled.)
In a small separate bowl add the oil, maple syrup, and vanilla. Mix well to incorporate the oil….don’t worry if it doesn’t completely combine.
Add the wet ingredients to the dry oat mixture and mix really well to make sure all the oats are well coated. (I use my hand instead of a spoon and am able to do a really good job at this task.)
Pour the granola onto a baking sheet. I used a 12” x 18” baking sheet. It’s best to spread the granola out to one layer for even baking.
Bake for approximately 35 minutes. After 15 minutes, stir granola around. And return to the oven. Check it after another 10-15 minutes. It should be a nice golden brown.
Remove from the oven. Cool completely. Add cranberries at this time.
Place in a container with a tight-fitting lid. It’s keep a couple of weeks in your pantry.
