When enjoying purple sticky rice, we feel the aroma, elasticity, sweet and fatty taste that is unique to any other type of sticky rice. Many people who have enjoyed purple sticky rice say that eating this sticky rice only makes them feel full but not boring, because the color and leaves make the sticky rice cool and not easy to get sick of. The sticky rice grains are soft, sweet, fragrant, and have a unique flavor that is hard to mix with any other type of sticky rice you've ever enjoyed.
People of northern ethnic groups often eat purple sticky rice with sesame salt. When eating, they need to chew slowly, the more they chew, the sweeter it becomes. This is also a convenient dish that can be brought along when going to the fields. Sometimes when guests come to visit the house or at festivals, there is often a dish of dark ram pork served with sticky rice.
The reason the sticky rice has an eye-catching purple color is because it has been dyed the color of sticky rice before being cooked. The process of dyeing the rice so purple is also very elaborate. The rice used to cook sticky rice is large-grain upland sticky rice, soaked and washed, thoroughly cleaned, then dyed purple with camphor leaves, a plant found only in high mountainous areas.
With the experience of ethnic people, when cooking purple sticky rice, two main ingredients are needed: sticky rice and black leaves. Sticky rice is a type of upland sticky rice grown on terraced fields. Black leaves are leaves that are picked from the forest, washed and then put in a pot of water to cook to turn purple. Let the leaf water cool, then add the sticky rice and soak it for a few hours so that the purple color absorbs evenly through the rice grains, then put it in the pot to make sticky rice.
The way to cook purple sticky rice is actually very simple, first wash the black leaves, add water and boil with mineral salt for 5-7 minutes until the purple color in the black leaves comes out and then filter out the residue. While the water from the leaves is still hot, add the rice to soak. Note that the water from the black leaves must cover the rice by about 3cm because the rice will expand after soaking. Soak sticky rice with black leaves for 6-8 hours so the purple sticky rice with black leaves will be more delicious and flavorful.
The sticky rice, after soaking with the leaves, is picked out and put into the steaming pot to start cooking. If you don't have rice cooker, you can cook sticky rice with black leaves in a rice cooker, but the sticky rice grains won't be as soft as cooking with rice cooker. The color of purple sticky rice depends on how thick or thin the black leaf juice is, depending on each person's experience. The sticky rice is just cooked, each grain of sticky rice is soft and shiny, bright purple, glossy, and delicious at first glance.
