Hii!! everyone 💛
In this video I am going to share the traditional recipe of Bihar that is Pushha. In most of the regions of Bihar पूस ke month me we make different types of Pitha,Kheer and Dalpudi. it is cooked after the new harvesting of crops in पूस month. Traditionally pitha is made with different kinds of fillings like Tici (flaxseed) and jaggery, Chana dal, aaloo,khoya.
These dishes are made in पूस that is why it is called पूसहा.
✍️ INGREDIENTS
For rice flour dough [चावल का आटा]
*Rice flour (चावल का आटा) - 1 kg
*Water(पानी) - 2 litre
For dal pitha
*Gram (चना दाल ) - 200g or 2 cups
*Cumin (जीरा) - 1 TSP
* Mustard Oil(तेल) - 2 Tbs
*Bay leaf(charpatta) - 2/3
*Green chilli (हरी मिर्च) - 2 ps
*Ginger garlic chopped (कटा हुआ अदरक लहसुन) - 1 TSP
*Cumin powder - 2 tsp
*Black pepper powder - 1tsp
*Tumeric powder ( हल्दी पाउडर ) - 1 TSP
*Garam Masala - 1 TSP
* Red chilli powder (लाल मिर्च पाउडर) - 1 TSP
*Coriander (कटा हुआ हरा धनिया) - ½ cup
*Carom seeds (अजवाइन) - 1tsp
* Kalonji/Mangrela - 1 TSP
*FOR KHOYA PITHA
* Khoya (खोया) - 400g
*Peanut (मुंगफली) - 150g (2cup)
*Sugar (चीनी) - 1 cup
* Almond (बादाम) - 7-8 pieces
*Cashew (काजू) - 7-8 pieces
{* Milk (दूध) - 2 litre
*Cardamom ( इलायची ) - 1/2 pieces
*Sugar - 2 Cup}
FOR TICI PITHA
* Flaxseeds( सन का बीज )/Tici - ½ cup
* jaggery( गुड़) - ⅓ cup
For AALOO WALA PITHA
* Boiled Potatoes (उबले आलू) - (10-15)
*Cumin (जीरा) - 1 TSP
* Mustard Oil(तेल) - 2 Tbs
*Bay leaf(charpatta) - 2/3
*Green chilli (हरी मिर्च) - 2 ps
*Ginger garlic chopped (कटा हुआ अदरक लहसुन) - 1 TSP
*Cumin powder - 2 tsp
*Black pepper powder - 1tsp
*Tumeric powder ( हल्दी पाउडर ) - 1 TSP
*Garam Masala - 1 TSP
* Red chilli powder (लाल मिर्च पाउडर) - 1 TSP
*Coriander (कटा हुआ हरा धनिया) - ½ cup
*Carom seeds (अजवाइन) - 1tsp
* Kalonji/Mangrela - 1 TSP
For Chawal Dalpudi all the ingredients same as pitha just flatten the shape
* Oil (तलने के लिए तेल ) - 1 litre
For Aata Dalpudi
* Wheat flour (गेहूं का आटा ) - 4 cup
*Water - 1 Cup
*Carom seeds (अजवाइन )
filling same as dal Pitha and aaloo wala Pitha
FOR KHEER
*Milk (दूध) - 1½ litre
*Raw rice (अरवा चावल) - 1 cup
*Sugar (चीनी) - 4 tbsp
' Cardamom (इलायची) - 2/3
*Cashew (काजू) - 10 pieces
* Almond (बादाम) - 10 pieces
*Ghee - 2 spoon (for frying dryfruits)
{You can use dry fruits of your choice}
